Tips for success
For the crispiest result, bake the böreği on the lowest oven rack, directly on the hot surface if possible. A preheated baking stone or heavy sheet pan works wonders.
If you have a convection oven, use it to promote even browning and extra crispness. Let the böreği cool for a few minutes before cutting, but serve them warm—they lose their shatter if left to sit too long.
When stretching the dough, keep your hands lightly oiled or buttered to prevent sticking. If the dough springs back, let it rest for a minute before continuing. The thinner you stretch, the more layers you’ll get.
Don’t worry about perfect circles—the rustic shape is part of the charm. And always brush the pomegranate molasses on while the böreği are still hot, so it soaks into the crust slightly.
Variations
- Lamb Version: Swap the ground beef for ground lamb and add a pinch of ground cinnamon or allspice to the topping. The lamb’s richness pairs beautifully with the pomegranate molasses.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a finely chopped fresh chili to the beef mixture for a subtle heat that balances the sweet molasses.
- Vegetarian Option: Replace the meat with a mixture of sautéed mushrooms, finely chopped walnuts, and crumbled feta cheese. Omit the beef and adjust the seasoning with salt and pepper.
- Cheese-Filled: Instead of beef, fill the stretched dough with a mixture of crumbled feta, mozzarella, and chopped parsley. Bake as directed, and skip the pomegranate molasses or use it sparingly.

Store leftover böreği in an airtight container at room temperature for up to 2 days. To reheat, place in a 350°F (175°C) oven for 5–7 minutes until crisp. Avoid microwaving, as it makes the crust chewy.
The dough can be made a day ahead and kept in the refrigerator, covered. Bring to room temperature before stretching. The beef topping can also be prepared in advance and refrigerated for up to 2 days. Assemble the böreği just before baking for best results.
Serving ideas
Serve the böreği hot, straight from the oven, with a side of strong Turkish tea. The bitterness of the tea balances the rich, buttery pastry and the sweet-tart beef.
For a more substantial meal, add a simple salad of cucumbers, tomatoes, and parsley with a lemon-olive oil dressing.
These böreği are also wonderful as a party appetizer—cut into wedges and serve on a platter with extra pomegranate molasses for drizzling.
They pair well with yogurt or a garlicky sauce, but they’re just as delicious on their own. The contrast of crisp layers and juicy topping makes them unforgettable.

Crispy Antakya Kaytaz Böreği with Spiced Beef

Ingredients
- 4 cups all-purpose flour
- 1 1/2 cups water
- 2 tsp active dry yeast
- 1 tsp salt
- 1/2 cup unsalted butter, melted
- 1 lb ground beef
- 1 medium onion, grated
- 2 tbsp tomato paste
- 1 tsp black pepper
- 3 tbsp pomegranate molasses
Instructions
- In a large bowl, combine the flour, salt, and yeast. Gradually add the water and mix until a soft dough forms. Knead for about 5–7 minutes until smooth and elastic. Cover and let rest for 30 minutes.
- Divide the dough into 8 equal balls. Pour the melted butter into a shallow dish. Dip each ball into the butter, coating completely, and place them on a plate. Cover and let rest for 10 minutes.
- On a clean work surface, take one buttered dough ball and gently press it flat. Using your hands, stretch it outward into a very thin, almost translucent circle. The dough should be thin enough to see your hand through.
- In a bowl, mix the ground beef, grated onion, tomato paste, black pepper, and 2 tablespoons of pomegranate molasses until well combined.
- Place the stretched dough on a parchment-lined baking sheet. Spread a portion of the beef mixture over the center, leaving a border. Fold the edges of the dough over the filling to create a rustic round, pleating as needed.
- Repeat the stretching and filling with the remaining dough balls and beef mixture. Place the assembled böreği on the baking sheet, leaving space between each.
- Preheat the oven to 390°F (200°C). Bake the böreği for 25 minutes, until the crust is deeply golden and blistered, and the beef is cooked through.
- Remove from the oven and immediately brush or drizzle the remaining 1 tablespoon of pomegranate molasses over the hot böreği. Let rest for 3 minutes before serving.
