Before you start

Before starting, make sure the butter is melted and slightly cooled. Proof the yeast in a small amount of warm water with a pinch of sugar for 5 minutes until foamy.

Grate the onion and squeeze out any excess liquid. Measure all ingredients and have them within reach. Set the oven to 390°F (200°C) about 15 minutes before baking. Line a baking sheet with parchment paper.

Ingredients at a glance (10)
  • 4 cups all-purpose flour
  • 1 1/2 cups water
  • 2 tsp active dry yeast
  • 1 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 lb ground beef
  • 1 medium onion, grated
  • 2 tbsp tomato paste
  • 1 tsp black pepper
  • 3 tbsp pomegranate molasses

Instructions

Phase 1: Soft Dough & Butter Bath

  1. Make the Dough
In a large bowl, combine the flour, salt, and yeast. Gradually add the water and mix until a soft dough forms. Knead for about 5–7 minutes until smooth and elastic. Cover and let rest for 30 minutes.
Look for The dough should be soft, slightly sticky, and smooth.
Tip If the dough feels too dry, add a tablespoon of water at a time.
  2. Divide and Butter the Dough
Divide the dough into 8 equal balls. Pour the melted butter into a shallow dish. Dip each ball into the butter, coating completely, and place them on a plate. Cover and let rest for 10 minutes.
Look for Each ball should be fully coated in butter and glossy.
Tip Keeping the dough well-buttered prevents tearing when stretching.

After kneading, the dough should be soft, smooth, and slightly tacky. Once divided and dipped in butter, the balls should look glossy and feel pliable. The butter coating keeps them from drying out and makes stretching easier. If the dough feels tight, let it rest a few more minutes.

Phase 2: Thin Stretch & Assembly

  1. Stretch the Dough Thin
On a clean work surface, take one buttered dough ball and gently press it flat. Using your hands, stretch it outward into a very thin, almost translucent circle. The dough should be thin enough to see your hand through.
Look for The dough is paper-thin and stretches without tearing.
Tip Work slowly and let the dough rest if it springs back.
  2. Prepare the Beef Topping
In a bowl, mix the ground beef, grated onion, tomato paste, black pepper, and 2 tablespoons of pomegranate molasses until well combined.
Look for The topping is a thick, aromatic paste.
Tip Grate the onion finely so it melts into the meat.
  3. Assemble the Böreği
Place the stretched dough on a parchment-lined baking sheet. Spread a portion of the beef mixture over the center, leaving a border. Fold the edges of the dough over the filling to create a rustic round, pleating as needed.
Look for The dough forms a neat package around the filling.
Tip Don't overfill; the dough should still be visible around the edges.
  4. Repeat with Remaining Dough
Repeat the stretching and filling with the remaining dough balls and beef mixture. Place the assembled böreği on the baking sheet, leaving space between each.
Look for All böreği are assembled and ready for baking.
Tip If the dough tears, simply patch it with a scrap piece.

The stretched dough should be so thin you can see your hand through it—it will be delicate but manageable. The beef mixture should be thick and aromatic, with the onion and spices fully incorporated.

Assembled böreği should look rustic, with the dough pleated around the filling. The edges should be slightly thinner, which will crisp up in the oven.

Phase 3: High-Heat Baking & Finish

  1. Bake at High Heat
Preheat the oven to 390°F (200°C). Bake the böreği for 25 minutes, until the crust is deeply golden and blistered, and the beef is cooked through.
Look for The pastry is puffed and browned, with sizzling spots.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip For extra crispness, bake on the lowest oven rack.
  2. Finish with Pomegranate Molasses
Remove from the oven and immediately brush or drizzle the remaining 1 tablespoon of pomegranate molasses over the hot böreği. Let rest for 3 minutes before serving.
Look for The molasses glistens and soaks into the warm crust.
Tip The resting time lets the juices settle and the crust stay crisp.

The böreği will puff and blister in the oven, filling the kitchen with a buttery, savory aroma. The crust should be deeply golden with some dark spots, and the beef should be bubbling. After brushing with pomegranate molasses, the surface will glisten. Letting them rest for a few minutes ensures the crust stays crisp.

Common mistakes

A common mistake is overfilling the dough, which makes it soggy and hard to seal. Keep the filling in the center and leave a border. Another issue is under-stretching the dough—it should be nearly translucent.

If the dough tears, don’t worry; just patch it. Also, avoid using cold butter for dipping; it must be melted to coat the dough properly. Finally, don’t skip the resting time for the dough—it’s key for easy stretching.

How to tell it’s done

The böreği is done when the crust is deep golden brown and blistered, with some darker spots from the butter. The beef topping should be cooked through, reaching an internal temperature of 160°F (71°C) when checked with an instant-read thermometer.

The crust should sound hollow when tapped and feel very crisp. Let rest for 3 minutes before serving so the juices settle.

  • Ground meat: 160°F (71°C) in the thickest part
