Tips for success
For an extra level of texture, try adding a tiny pinch of cornstarch to the chickpeas along with the spices. This helps to absorb any remaining moisture and creates an even crunchier shell.
However, this is entirely optional, as the standard method already provides a fantastic, satisfying result that is perfect for snacking.
If you enjoy a bit of heat, add a pinch of cayenne pepper or chili flakes to the spice mixture. The heat from the pepper pairs exceptionally well with the smokiness of the paprika and the citrusy notes of the fresh lemon zest.
Adjust the spice level according to your personal preference, but remember that the flavors will intensify during the cooking process.
Variations
- Garlic Herb Chickpeas: Omit the smoked paprika and increase the garlic powder to 1 teaspoon. Add 1 teaspoon of dried oregano and 1 teaspoon of dried parsley to the spice mix before air frying for a savory, herb-forward snack.
- Spicy Chili Chickpeas: Add 1/2 teaspoon of cayenne pepper and 1/2 teaspoon of chili powder to the seasoning mix. This variation provides a pleasant heat that complements the crunch and is perfect for those who enjoy a bit of spice.
Storage and make-ahead
- Fridge
- These are best stored at room temperature; refrigeration is not recommended as it will cause the chickpeas to lose their crisp texture.
- Reheat
- To regain crispness, place in the air fryer at 350°F for 2 to 3 minutes until warm and crunchy again.
Store any leftovers in an airtight container at room temperature. They will stay crisp for up to two days, though they are always best enjoyed fresh from the air fryer. If they lose their crispness over time, you can quickly refresh them in the air fryer for 2-3 minutes at 350°F to bring back that signature crunch.
You can rinse and dry the chickpeas a few hours in advance, but it is best to season and air fry them right before you plan to serve them. This ensures they maintain their optimal texture and flavor.
If you must prepare them ahead, keep them in a cool, dry place and avoid sealing them in a container until they are completely cool to prevent sogginess.
Serving ideas
These chickpeas are best served warm, shortly after they come out of the air fryer. They make an excellent standalone snack, but they can also be used as a crunchy topping for salads, soups, or grain bowls.
The combination of smoky, salty, and citrusy flavors makes them a versatile addition to many different types of dishes.
When serving, consider placing them in a small ceramic bowl to retain the heat. A little extra drizzle of olive oil or a sprinkle of fresh herbs just before serving can enhance the presentation. They are perfect for sharing with guests or keeping on hand for whenever a savory, crunchy craving strikes during the day.

Ingredients
- 400 g cooked garbanzo beans, rinsed and thoroughly dried
- 15 ml olive oil
- 10 g smoked paprika
- 5 g cumin
- 1/2 tsp garlic powder
- 1/2 tsp flaky sea salt
- 1 tsp fresh lemon zest
- 1 tbsp fresh rosemary, minced
Instructions
- Rinse the garbanzo beans thoroughly under cold running water using a colander. Transfer the rinsed beans to a clean kitchen towel and pat them dry completely. Ensuring the surface of the beans is free of moisture is essential for achieving the best crunch during the air-frying process.
- Place the dried chickpeas into a large mixing bowl. Drizzle with olive oil, then add the smoked paprika, cumin, garlic powder, and a generous pinch of flaky sea salt. Toss everything together until each chickpea is evenly coated with the oil and spice mixture.
- Preheat the air fryer to 390°F. Arrange the seasoned chickpeas in a single layer in the air fryer basket. Cook for 14 minutes, ensuring the basket is removed and shaken at least twice during the cooking time to promote even browning. Once finished, remove the basket and finish with fresh lemon zest and finely chopped fresh rosemary.
