Tips for success
For the crispiest crust, make sure the chicken is completely dry before coating. Pat it with paper towels to remove excess moisture.
Also, let the coated tenders rest for 5 minutes before air frying—this helps the coating set and adhere better. If you have time, chill the breaded tenders in the fridge for 15 minutes before cooking.
To get an extra golden color, spray the tenders with oil halfway through cooking, after flipping. This ensures even browning.
If you like a spicier kick, add a pinch of cayenne pepper or chili flakes to the coating mixture. For a more intense coconut flavor, use toasted shredded coconut in the coating.
Variations
- Spicy Sriracha Coconut Tenders: Add 1-2 tsp sriracha to the egg wash and a pinch of cayenne to the coating for a spicy twist. Serve with a cooling ranch or blue cheese dip.
- Almond-Coconut Crusted Tenders: Replace half of the panko with finely chopped almonds for extra crunch and nutty flavor. Toast the almonds lightly before mixing for a deeper taste.
- Pineapple Sweet Chili Glaze: Brush the cooked tenders with a mixture of sweet chili sauce and pineapple juice, then air fry for 1-2 minutes to caramelize. Serve with extra glaze.
- Coconut-Lime Chicken Tenders: Add the zest of one lime to the coating mixture and serve with a lime wedge. The lime brightens the sweet coconut flavor and adds freshness.

Leftover tenders can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place them in the air fryer at 180°C (350°F) for 3-4 minutes until hot and crispy. Avoid microwaving, as it will make the coating soggy.
The breaded tenders can be prepared up to 24 hours in advance. Place them in a single layer on a baking sheet, cover with plastic wrap, and refrigerate.
When ready to cook, air fry as directed, adding 1-2 minutes to the cooking time if they are cold from the fridge.
Serving ideas
Serve the coconut chicken tenders hot with sweet chili sauce for dipping. They also pair well with a fresh green salad, steamed rice, or roasted vegetables. For a fun appetizer, cut the tenders into bite-sized pieces and serve with toothpicks.
These tenders are versatile—enjoy them as a main course with your favorite sides, or slice them up and add to wraps or salads.
The sweet chili sauce can be swapped for honey mustard, ranch, or a creamy sriracha dip if desired. The sweet and savory flavor works with many dipping sauces.

Crispy Air Fryer Coconut Chicken Tenders with Sweet Chili Dip

Ingredients
- 1 lb chicken tenderloins
- 1/2 cup all-purpose flour
- 2 large eggs
- 2 tbsp coconut milk
- 1 cup sweetened shredded coconut
- 1/2 cup panko breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp salt
- Olive oil spray, for misting, to taste
- Sweet chili dipping sauce, for serving
Instructions
- In a shallow dish, combine the shredded coconut, panko breadcrumbs, garlic powder, and salt. In a second dish, place the all-purpose flour. In a third dish, whisk the eggs with the coconut milk until smooth. Pat the chicken tenderloins dry with paper towels.
- Dredge each tender in the flour, shaking off any excess. Dip it into the egg-coconut milk mixture, letting any excess drip off. Press the tender firmly into the coconut-panko mixture, turning to coat evenly. Place the coated tenders on a plate while breading the rest.
- Preheat the air fryer to 190°C (375°F) for 3 minutes. Lightly spray the air fryer basket with olive oil spray to prevent sticking.
- Place the coated tenders in a single layer in the air fryer basket, leaving space between each piece. Mist the tops generously with olive oil spray. Air fry at 190°C (375°F) for 5 minutes, then flip the tenders and mist the other side with olive oil spray. Continue air frying for another 5 minutes, until the crust is golden brown and the chicken is cooked through.
- After the cooking time is complete, remove one tender from the air fryer and tap the crust with tongs to check for a crisp, crackling sound. If the crust is not as crisp as desired, air fry for an additional 1-2 minutes.
- Transfer the crispy tenders to a serving platter. Serve immediately with sweet chili dipping sauce on the side for dunking.
