Tips for success

To get the perfect crunch, make sure the onion is completely dry before coating. Use paper towels to pat it dry, and let it air-dry for a few minutes if needed.

Also, do not overcrowd the air fryer basket; if your air fryer is small, cook the onion in batches or use a larger basket. The onion should sit upright with the root side down so the petals can fan out and cook evenly.

For extra flavor, you can add a pinch of smoked paprika to the panko mixture along with the flour seasoning. The dip can be customized: add more hot sauce for heat, or a squeeze of lemon juice for brightness.

If you have leftover dip, it is great on sandwiches or as a veggie dip. The blooming onion is best served immediately, but you can keep it warm in a low oven for up to 15 minutes.

Variations

  • Spicy Sriracha Dip: Replace the hot sauce with sriracha and add a pinch of smoked paprika to the dip. This gives a spicier, more complex flavor that pairs well with the sweet onion.
  • Herb and Parmesan Crust: Mix 2 tablespoons of grated Parmesan cheese and 1 teaspoon of dried Italian herbs into the panko breadcrumbs. This adds a savory, cheesy flavor to the crust.
  • Honey Mustard Dip: For a sweeter dip, combine 100g mayonnaise, 2 tablespoons Dijon mustard, and 1 tablespoon honey. This is a classic pairing with crispy onions.
  • Cajun Blooming Onion: Add 1 teaspoon of Cajun seasoning to the flour mixture and reduce the cayenne to 1/4 teaspoon. This gives a smoky, spicy kick that is perfect for a Southern twist.

Storage and make-ahead

Fridge
Store leftover blooming onion in an airtight container in the refrigerator for up to 2 days. The dip can be refrigerated for up to 3 days.
Freezer
Freezing is not recommended, as the coating will become soggy and the onion will lose its crisp texture.
Reheat
To reheat, place the onion in the air fryer at 350°F (175°C) for 3-4 minutes, or until heated through and crispy.

Leftover blooming onion can be stored in an airtight container in the refrigerator for up to 2 days. The coating will soften, so reheat in the air fryer at 350°F (175°C) for 3-4 minutes to restore some crispness.

The dip can be stored separately in the refrigerator for up to 3 days. Do not freeze the cooked onion, as the texture will become soggy when thawed.

The dip can be made up to 3 days ahead and stored in the refrigerator. The onion can be cut and soaked in ice water up to 2 hours before cooking; keep it in the refrigerator.

The coating steps are best done right before cooking, as the panko may become soggy if left for too long. However, you can prepare the dredging stations ahead of time and store them covered at room temperature for a few hours.

Serving ideas

Serve the blooming onion immediately after air frying, while it is still hot and crunchy. Place it on a large cutting board or platter, with the dip in a small bowl in the center. You can also serve the dip on the side for easier dipping. This appetizer is perfect for sharing, and it is a fun, interactive dish that everyone will enjoy pulling apart.

Pair the blooming onion with cold drinks like beer or a crisp white wine. It also goes well with other fried-style appetizers like chicken wings or mozzarella sticks. For a complete game-day spread, serve it alongside burgers or sandwiches. The smoky comeback dip is also delicious with fresh vegetables or as a spread on a burger.

Frequently asked questions

Why does the blooming onion fall apart when cutting?
The root must be left intact to hold the petals together. Use a sharp knife and make clean, even cuts from the top down, stopping about 1/2 inch from the root. If the onion is very large, you can use a skewer to gently separate the petals after cutting.
Can this be made in a regular oven?
Yes, place the coated onion on a baking sheet lined with parchment paper and bake at 400°F (200°C) for 25-30 minutes, or until golden and crispy. You may need to flip or rotate the onion halfway through for even browning.
How do you get the coating to stick to the onion?
Make sure the onion is completely dry before dredging. Dust with flour first, then dip in egg wash, and finally press into panko. The flour helps the egg stick, and the egg helps the panko adhere. Be gentle but firm when pressing the coating onto the petals.
What if the onion is too spicy?
The cayenne pepper adds a mild heat. If you prefer less spice, reduce the cayenne to 1/4 teaspoon or omit it entirely. You can also use a mild paprika instead of hot paprika. The sweet onion itself is not spicy, so the heat comes only from the seasoning.
Can the dip be made ahead?
Yes, the comeback dip can be made up to 3 days in advance and stored in an airtight container in the refrigerator. Stir well before serving. The flavors will meld together, making it even more delicious.

Golden air-fried blooming onion with comeback dip in the center on a wooden board

Ingredients

  • 1 large sweet Vidalia onion
  • 150 g all-purpose flour
  • 2 large eggs
  • 50 ml milk
  • 100 g panko breadcrumbs
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • Olive oil spray, for misting, to taste
  • 100 g mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp prepared horseradish
  • 1 tsp hot sauce

Instructions

  1. Peel the onion and trim the top. Place the onion root-side down on a cutting board. Starting about 1/2 inch from the root, make vertical cuts downward to create 16 even wedges, keeping the root intact. Gently spread the petals apart with your fingers. Place the onion in a bowl of ice water and let it sit for 10 minutes so the petals open and crisp slightly.
  2. In a shallow bowl, combine the flour, paprika, garlic powder, onion powder, and cayenne. Whisk to blend thoroughly. In a separate bowl, beat the eggs with the milk until smooth. Place the panko breadcrumbs in a third shallow bowl.
  3. Remove the onion from the ice water and pat it dry thoroughly with paper towels. Dust the onion with the seasoned flour, working the flour between every petal. Shake off any excess. Dip the floured onion into the egg wash, making sure to coat all the petals. Then press the onion into the panko breadcrumbs, coating each petal generously. Gently shake to remove any loose crumbs.
  4. Preheat the air fryer to 375°F (190°C) for 3 minutes. Place the coated onion in the air fryer basket, root-side down. Spray generously with olive oil spray, making sure to coat all the petals. Air fry for 18 minutes, until deeply golden and crispy. If your air fryer is smaller, you may need to cook in batches or rotate the onion halfway through.
  5. After 18 minutes, check the onion. The coating should be deeply golden and crunchy. If some petals are still pale, spray a little more oil and air fry for an additional 2-3 minutes. The root should be tender when pierced with a knife, and the petals should be crisp enough to snap when bent.
  6. In a small bowl, stir together the mayonnaise, ketchup, horseradish, and hot sauce until smooth. Taste and adjust the seasoning if desired. The dip should be creamy with a smoky, tangy kick.
  7. Transfer the air-fried onion to a serving board or plate. Place the comeback dip in a small bowl and nestle it in the center of the onion, or serve it on the side. Pull apart a crispy petal and dip it into the sauce. Serve immediately while hot and crunchy.
