Before you start

Before starting, make sure the air fryer basket is clean and dry. Fill a large bowl with ice water and set it aside. Prepare the dredging stations: one shallow bowl with the seasoned flour, one with the egg wash, and one with the panko.

Have paper towels ready for drying the onion. Measure all the ingredients for the dip and set them aside. The onion needs to soak in the ice water for 10 minutes, so plan ahead. Preheat the air fryer to 375°F (190°C) just before you are ready to cook.

Ingredients at a glance (14)
  • 1 large sweet Vidalia onion
  • 150 g all-purpose flour
  • 2 large eggs
  • 50 ml milk
  • 100 g panko breadcrumbs
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • Olive oil spray, for misting, to taste
  • 100 g mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp prepared horseradish
  • 1 tsp hot sauce

Instructions

Prep and Coat

  1. Prepare the Onion
Peel the onion and trim the top. Place the onion root-side down on a cutting board. Starting about 1/2 inch from the root, make vertical cuts downward to create 16 even wedges, keeping the root intact. Gently spread the petals apart with your fingers. Place the onion in a bowl of ice water and let it sit for 10 minutes so the petals open and crisp slightly.
Look for The petals should fan out like a flower, with the root holding them together.
Tip Chilling in ice water helps the onion open and also reduces the sharpness of the raw onion.
  2. Make the Seasoned Flour
In a shallow bowl, combine the flour, paprika, garlic powder, onion powder, and cayenne. Whisk to blend thoroughly. In a separate bowl, beat the eggs with the milk until smooth. Place the panko breadcrumbs in a third shallow bowl.
Look for The flour mixture should be evenly tinted with paprika and have a spicy aroma.
Tip Use a fork to whisk the egg wash; this helps break up the eggs quickly and evenly.
  3. Dredge the Onion
Remove the onion from the ice water and pat it dry thoroughly with paper towels. Dust the onion with the seasoned flour, working the flour between every petal. Shake off any excess. Dip the floured onion into the egg wash, making sure to coat all the petals. Then press the onion into the panko breadcrumbs, coating each petal generously. Gently shake to remove any loose crumbs.
Look for Every petal should be evenly coated with a thin layer of flour, egg, and panko.
Tip To get the coating into the center, use your fingers to gently separate the petals while applying the coating.

At the end of this phase, the onion should be cut into 16 petals with the root intact, and after the ice water bath, the petals should fan out naturally.

The onion should be thoroughly dried and coated with a thin layer of flour, then egg wash, then panko. The coating should be evenly distributed, with no bare spots. The dredging stations should be set up in order, and the onion should be ready to cook.

Air Fry to Golden

  1. Air Fry the Onion
Preheat the air fryer to 375°F (190°C) for 3 minutes. Place the coated onion in the air fryer basket, root-side down. Spray generously with olive oil spray, making sure to coat all the petals. Air fry for 18 minutes, until deeply golden and crispy. If your air fryer is smaller, you may need to cook in batches or rotate the onion halfway through.
Look for The onion should be deep golden brown and the petals should be crisp to the touch.
Tip Spraying with oil is essential for browning and crunch; don't skip it.
  2. Check for Doneness
After 18 minutes, check the onion. The coating should be deeply golden and crunchy. If some petals are still pale, spray a little more oil and air fry for an additional 2-3 minutes. The root should be tender when pierced with a knife, and the petals should be crisp enough to snap when bent.
Look for The onion should be evenly browned and the petals should sound crispy when tapped.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Air fryer temperatures vary; keep an eye on it during the last few minutes to avoid burning.

During air frying, the onion will gradually turn golden brown. The kitchen will smell of toasted panko and sweet onion. After 15 minutes, the coating should be crisp and golden, with some darker spots where the panko has toasted. The petals should be firm and crunchy to the touch. If some petals are still pale, spray with a little more oil and continue cooking for another 3 minutes.

Make Dip and Serve

  1. Make the Dip
In a small bowl, stir together the mayonnaise, ketchup, horseradish, and hot sauce until smooth. Taste and adjust the seasoning if desired. The dip should be creamy with a smoky, tangy kick.
Look for The dip should be a smooth, orange-pink color with a balanced flavor.
Tip For a smokier dip, add a pinch of smoked paprika.
  2. Serve the Blooming Onion
Transfer the air-fried onion to a serving board or plate. Place the comeback dip in a small bowl and nestle it in the center of the onion, or serve it on the side. Pull apart a crispy petal and dip it into the sauce. Serve immediately while hot and crunchy.
Look for The onion should be golden, crisp, and steaming when pulled apart.
Tip Serve with extra napkins—this is a hands-on appetizer.

The dip should be smooth and creamy, with a balanced flavor of tangy ketchup, sharp horseradish, and a hint of heat from the hot sauce. The onion should be transferred to a serving board, with the dip nestled in the center or served on the side. When you pull a petal, it should come away with a satisfying crunch, revealing the tender, sweet onion inside.

Common mistakes

One common mistake is not drying the onion thoroughly after the ice water bath, which causes the coating to steam and fall off. Another is overloading the air fryer basket, which blocks airflow and results in uneven cooking.

Be sure to spray the onion generously with oil; without it, the panko will not brown properly. Also, do not skip the seasoned flour step, as it helps the egg wash and panko adhere. Finally, check the onion at the 15-minute mark to prevent burning, as air fryer temperatures can vary.

How to tell it’s done

The blooming onion is done when it is deeply golden brown and the petals are crisp to the touch. If you tap a petal, it should sound crunchy. The root should be tender when pierced with a knife, and the onion should be cooked through.

The total cooking time is about 18 minutes, but air fryers vary, so check at the 15-minute mark and add time if needed. The coating should be evenly browned, with no pale or soggy spots. Let the onion rest for 5 minutes before serving to allow the coating to set.
