Tips for success
For maximum crispiness, let the breaded florets rest for 5 minutes before air frying; this helps the coating set.
If you have time, chill the breaded florets in the refrigerator for 15 minutes—this firms up the batter and prevents the panko from falling off. Always preheat the air fryer; a hot basket ensures immediate sizzle and browning.
When making the glaze, keep the heat medium-low and whisk constantly to prevent the butter from separating. If the glaze thickens too much, add a teaspoon of water or extra hot sauce to loosen it. The glaze can be made ahead and reheated gently, but the cauliflower should be tossed just before serving to preserve its crunch.
Variations
- Extra Spicy: Add 1 teaspoon of cayenne pepper to the batter and increase the hot honey to 3 tablespoons. Use a hotter buffalo sauce or add a few dashes of your favorite hot sauce to the glaze for an intense kick.
- Smoky BBQ: Replace the buffalo sauce with your favorite barbecue sauce and add 1/2 teaspoon smoked paprika to the batter. The hot honey can be swapped for regular honey or omitted for a tangy-sweet glaze.
- Garlic Parmesan: After tossing in the glaze, sprinkle with 1/4 cup grated Parmesan cheese and 1 teaspoon garlic powder. This adds a savory, cheesy note that balances the heat.
- Lemon Pepper: Add 1 tablespoon lemon zest and 1 teaspoon cracked black pepper to the batter. Replace the hot honey with regular honey and add 1 tablespoon lemon juice to the glaze for a bright, citrusy twist.
Storage and make-ahead
- Fridge
- Store leftover cauliflower wings in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer or oven to restore crispness.
- Freezer
- Freeze breaded, uncooked florets in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat leftovers in the air fryer at 375°F (190°C) for 3–5 minutes, or in a 400°F (200°C) oven for 5–7 minutes, until hot and crisp.
Leftover cauliflower wings can be stored in an airtight container in the refrigerator for up to 3 days. To maintain crispness, store them without the glaze if possible, and add the glaze when reheating.
If already glazed, they will soften but still taste delicious. Reheat in the air fryer at 375°F (190°C) for 3–5 minutes, or in a 400°F (200°C) oven for 5–7 minutes, until hot and sizzling.
The cauliflower can be cut and breaded up to 24 hours ahead. Store the breaded florets in a single layer on a baking sheet, covered, in the refrigerator.
Air fry as directed, adding 1–2 minutes if starting from cold. The glaze can be prepared up to 3 days ahead and kept in the refrigerator; reheat gently before tossing. This makes party prep easy and stress-free.
Serving ideas
Serve the cauliflower wings immediately after tossing in the glaze, while they are still shatteringly crisp. Arrange them on a platter with a bowl of cool ranch dressing for dipping.
Sprinkle with chopped fresh parsley for a pop of color and freshness. These wings are perfect as a game-day appetizer, a party snack, or a fun weeknight dinner when paired with celery sticks and extra dipping sauce.
For a more substantial meal, serve the wings over a bed of rice or alongside a crisp green salad. They also work well as a filling for tacos or wraps, drizzled with extra glaze and ranch. If serving a crowd, double the recipe and cook in batches, keeping the first batch warm in a 200°F (95°C) oven while the rest finish.

Crispy Air-Fried Hot Honey Buffalo Cauliflower Wings

Ingredients
- 1 medium head cauliflower, cut into florets
- 3/4 cup all-purpose flour
- 1/4 cup cornstarch
- 1 tsp garlic powder
- 3/4 cup water
- 1 1/2 cups panko breadcrumbs
- 1/2 cup buffalo sauce
- 2 tbsp unsalted butter, melted
- 2 tbsp hot honey
- ranch dressing, for dipping, to taste
- fresh parsley, chopped (optional)
Instructions
- Cut the cauliflower into bite-size florets. In a large bowl, whisk together the all-purpose flour, cornstarch, garlic powder, and water until smooth and lump-free. The batter should be the consistency of thin pancake batter. Add the florets and toss to coat evenly. Place the panko breadcrumbs in a shallow dish. Working one at a time, lift each battered floret, let excess batter drip off, and roll in the panko, pressing gently to adhere. Set the breaded florets on a plate.
- Preheat the air fryer to 400°F (200°C). Arrange the breaded florets in a single layer in the air fryer basket, leaving space between pieces for air circulation. Cook for 15 minutes, shaking the basket halfway through, until the florets are golden amber, blistered, and crackling crisp. Work in batches if needed to avoid overcrowding.
- While the cauliflower cooks, combine the buffalo sauce, melted butter, and hot honey in a small saucepan. Warm over medium heat, whisking, until the mixture is glossy, frothy, and heated through. Remove from the heat. When the cauliflower is done, transfer to a large bowl, pour the glaze over, and toss gently with tongs until every floret is coated. Serve immediately with ranch dressing for dipping and a sprinkle of chopped parsley, if desired.
