Before you start

Before starting, gather all ingredients and set up a breading station: one bowl for the batter, one shallow dish for panko, and a plate for the breaded florets. Cut the cauliflower into florets and pat them dry if washed.

Measure the flour, cornstarch, garlic powder, and water for the batter. Have the buffalo sauce, butter, and hot honey ready for the glaze. Preheat the air fryer to 400°F (200°C). If using ranch dressing, pour it into a small bowl for serving. Chop fresh parsley, if using.

Ingredients at a glance (11)
  • 1 medium head cauliflower, cut into florets
  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp garlic powder
  • 3/4 cup water
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup buffalo sauce
  • 2 tbsp unsalted butter, melted
  • 2 tbsp hot honey
  • ranch dressing, for dipping, to taste
  • fresh parsley, chopped (optional)

Instructions

Prep and Coat

  1. Prepare the Cauliflower and Batter
Cut the cauliflower into bite-size florets. In a large bowl, whisk together the all-purpose flour, cornstarch, garlic powder, and water until smooth and lump-free. The batter should be the consistency of thin pancake batter. Add the florets and toss to coat evenly. Place the panko breadcrumbs in a shallow dish. Working one at a time, lift each battered floret, let excess batter drip off, and roll in the panko, pressing gently to adhere. Set the breaded florets on a plate.
Look for The batter clings to the florets and the panko forms an even, sandy coating.
Tip Keep one hand for the wet batter and the other for the dry panko to avoid clumping.

The florets should be evenly coated with a smooth batter and then generously dredged in panko, with no bare spots. The coating should feel dry and sandy to the touch.

The batter should not be dripping excessively; if it is, shake off the excess before rolling in panko. The panko layer should be thick enough to create a craggy texture when cooked.

Air Fry to Crisp

  1. Air Fry the Cauliflower
Preheat the air fryer to 400°F (200°C). Arrange the breaded florets in a single layer in the air fryer basket, leaving space between pieces for air circulation. Cook for 15 minutes, shaking the basket halfway through, until the florets are golden amber, blistered, and crackling crisp. Work in batches if needed to avoid overcrowding.
Look for The coating is deeply golden and sounds crunchy when shaken.
Tip Do not overcrowd the basket; crispiness depends on hot air reaching every surface.

Halfway through cooking, the florets should be starting to turn golden at the edges. After 15 minutes, they should be deep amber, blistered, and sound crisp when shaken in the basket. The kitchen will smell of toasted breadcrumbs and spices. The florets should be firm to the touch but yield slightly when pressed.

Glaze and Serve

  1. Make the Glaze and Toss
While the cauliflower cooks, combine the buffalo sauce, melted butter, and hot honey in a small saucepan. Warm over medium heat, whisking, until the mixture is glossy, frothy, and heated through. Remove from the heat. When the cauliflower is done, transfer to a large bowl, pour the glaze over, and toss gently with tongs until every floret is coated. Serve immediately with ranch dressing for dipping and a sprinkle of chopped parsley, if desired.
Look for The florets are sticky, shiny, and evenly coated with the glossy glaze.
Tip Toss gently to keep the crust intact; serve right away for maximum crunch.

The glaze should be glossy, frothy, and heated through, with a balanced spicy-sweet aroma. After tossing, each floret should be coated in a shiny, sticky layer without pooling excess sauce at the bottom of the bowl. The crunch should be audible when you bite into a floret, and the ranch dip provides a cool, creamy contrast.

Common mistakes

A common mistake is overcrowding the air fryer basket, which steams the florets instead of crisping them. Work in batches if necessary. Another pitfall is a batter that is too thick, resulting in a doughy coating; thin it with a little water if needed.

Skipping the shake at the halfway point can lead to uneven browning. Also, tossing the florets in the glaze too early can make them soggy—toss right before serving. Finally, avoid using wet hands when handling the panko; it will clump and not adhere evenly.

How to tell it’s done

The cauliflower wings are done when the coating is deep golden amber, blistered, and crackling crisp. The florets should be tender inside but not mushy. To check, pierce a floret with a knife; it should slide in easily.

Since there is no raw protein in this recipe, a safe internal temperature is not applicable, but the visual cues of golden color and audible crunch when shaken are reliable indicators. If you prefer extra crispness, air fry for 2–3 minutes more, watching closely to avoid burning.
