Tips for success
For the crispiest results, dry the zucchinis thoroughly before cutting. Excess moisture can make them steam instead of crisp. Also, don't skimp on the olive oil—it's essential for browning.
Use a pastry brush to ensure even coverage, especially in the crevices. If you have time, let the seasoned zucchinis sit for 5 minutes before air frying to help the coating adhere.
If you don't have an air fryer, you can bake these in a conventional oven at 425°F (220°C) for about 20-25 minutes, flipping halfway. Place them on a wire rack set over a baking sheet to allow hot air to circulate.
The texture may be slightly less crispy, but they will still be delicious. For extra crunch, you can also lightly coat the zucchinis with panko breadcrumbs before air frying.
Variations
- Spicy Kick: Add 1/2 teaspoon of cayenne pepper or red pepper flakes to the seasoning mix for a spicy version. You can also drizzle the finished fries with sriracha or your favorite hot sauce.
- Herb Garden: Swap the dried oregano for 1 tablespoon of fresh thyme or rosemary, finely chopped. Add a teaspoon of lemon zest to the parmesan coating for a bright, citrusy note.
- Cheesy Garlic: Increase the parmesan to 3/4 cup and add an extra teaspoon of garlic powder. For a richer sauce, stir in 2 tablespoons of crumbled feta or blue cheese.
- Crunchy Panko: After brushing with oil, coat the accordion zucchinis with panko breadcrumbs mixed with the parmesan and spices. This adds an extra-crispy, golden crust.

Serving ideas
Serve the accordion zucchini fries hot, straight from the air fryer, with the herb parmesan dipping sauce on the side.
They make a fantastic appetizer for parties, a fun side dish for burgers or grilled meats, or a satisfying snack for movie night. The dramatic accordion shape is sure to impress guests.
For a more substantial meal, serve the fries alongside a crisp green salad or as a topping for a grain bowl. They also pair well with roasted chicken or fish.
If you have extra sauce, use it as a dressing for salads or a dip for raw vegetables. Enjoy them while they're hot and crispy for the best texture.

Crispy Accordion Zucchini Fries with Herb Parmesan Dipping Sauce

Ingredients
- 3 medium zucchinis
- 2 wooden chopsticks (for slicing guides)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1 tsp sea salt flakes
- 1/2 cup grated parmesan cheese
- 1/2 cup Greek yogurt
- 1 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 tbsp chopped fresh dill
- 1 grated garlic clove
Instructions
- Place one zucchini between two wooden chopsticks on a cutting board. Make straight vertical cuts along the entire length of the zucchini, spacing the cuts about 1/4 inch apart. Stop each cut at the chopstick so the bottom stays intact. Flip the zucchini over and make diagonal cuts at a 45-degree angle, again stopping at the chopstick. The result is an accordion that can be gently stretched open. Repeat with the remaining zucchinis.
- Gently stretch each accordion zucchini open. Brush the olive oil over the entire surface, including between the slices. In a small bowl, mix the garlic powder, smoked paprika, dried oregano, and sea salt flakes. Sprinkle this seasoning mixture evenly over the zucchini, making sure to get some between the slices. Finally, press the grated parmesan cheese onto the surface, coating every nook and cranny.
- Preheat the air fryer to 400°F (200°C). Place the seasoned accordion zucchinis in the air fryer basket in a single layer, leaving space between them for air circulation. Air fry for 14 minutes, or until the edges are deep golden brown and crispy. The zucchini should be tender inside and shatteringly crisp on the outside. Work in batches if needed to avoid overcrowding.
- While the zucchini fries cook, prepare the dipping sauce. In a small bowl, combine the Greek yogurt, mayonnaise, lemon juice, chopped fresh dill, and grated garlic clove. Stir until smooth and well blended. Season with a pinch of salt if desired. Cover and refrigerate until ready to serve.
- Remove the crispy accordion zucchini fries from the air fryer and let them cool for 2 minutes on a wire rack. Serve immediately with the herb parmesan dipping sauce on the side. The fries are best enjoyed right away while they are still crispy and hot.
