Tips for success
To elevate the flavor of your pre-cooked chicken, try tossing it with a squeeze of fresh lime juice or a pinch of mild spices before rolling it into the tortillas.
This adds a bright acidity and extra depth that cuts through the richness of the creamy sauce. You can also mix a small amount of the white sauce directly into the shredded chicken to keep the filling extra juicy.
If you prefer a bit of texture contrast, you can sprinkle a small amount of the shredded cheese directly onto the baking dish before laying down the tortillas.
This creates a slightly crispy cheese layer at the bottom of the casserole. Always let the baked dish rest for a few minutes before slicing to allow the sauce to set slightly, making serving much cleaner.
Variations
- Spicy Cheese Enchiladas: Use pepper jack cheese instead of mild cheese and add diced jalapeños to the chicken filling for an extra kick of heat.
- Spinach and Chicken Enchiladas: Stir some cooked, drained spinach into the shredded chicken mixture before rolling to add color and a mild earthy flavor.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days, cooling for no more than 2 hours beforehand.
- Freezer
- Freeze in airtight, freezer-safe containers for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat

Store any leftover enchiladas in an airtight container in the refrigerator for up to three days. Allow the casserole to cool completely at room temperature for no more than two hours before transferring it to the fridge to maintain food safety.
For longer storage, you can freeze individual portions in freezer-safe containers for up to two months.
This casserole is excellent for preparing in advance. You can assemble the enchiladas, cover them with the sauce and cheese, and store the unbaked dish tightly covered in the refrigerator for up to twenty-four hours.
When ready to serve, bake directly from the fridge, adding about five to ten minutes to the baking time to ensure it heats through completely.
Serving ideas
Serve these creamy enchiladas hot, straight from the baking dish, to enjoy the gooey cheese pull at its best. They pair wonderfully with classic sides like seasoned rice, black beans, or a simple corn salad. A crisp green salad with a light vinaigrette also provides a refreshing contrast to the rich, savory flavors of the creamy casserole.
Create a simple topping station to let everyone customize their plates. Great options include sliced fresh jalapeños, diced avocados, a scoop of sour cream, or a spoonful of bright salsa. Be sure to offer extra fresh herb leaves and lime wedges on the side to add a pop of color and fresh flavor to each serving.

Creamy White Chicken Enchiladas with Bubbly Cheese

Ingredients
- 3 cups cooked shredded chicken (store-bought or made ahead)
- 8 tortillas
- 2 cups creamy white sauce (store-bought or made ahead)
- 2 cups shredded cheese
- fresh herbs, chopped, for serving
Instructions
- Preheat the oven to 375°F (190°C). Lay the tortillas flat on a clean work surface. Divide the cooked shredded chicken and a portion of the shredded cheese evenly among the tortillas, placing the filling in a line down the center of each tortilla.
- Roll each tortilla tightly around the chicken and cheese filling. Place the rolled tortillas seam-side down in a baking dish, fitting them snugly in a single layer to prevent them from unrolling during baking.
- Pour the creamy white sauce evenly over the arranged tortillas, making sure to cover them completely so the edges do not dry out. Sprinkle the remaining shredded cheese generously over the top of the sauce.
- Place the baking dish in the preheated oven and bake for 20 to 25 minutes. The casserole is ready when the creamy sauce is bubbling rapidly around the edges and the cheese on top is completely melted and golden-brown.
- Remove the baking dish from the oven. Sprinkle the chopped fresh herbs evenly over the hot, bubbly cheese crust. Serve the enchiladas warm, lifting them carefully with a spatula to showcase the dramatic cheese pull.
