Before you start

Before starting, ensure all vegetables are properly cleaned. Peel the potatoes and cut them into even, half-inch cubes to ensure they cook through at the same time.

Rinse the canned beans thoroughly in a colander under cool running water until the water runs clear. Have your broth measured and ready to pour to make the assembly process as quick as possible, keeping your workspace clean and efficient.

Ingredients at a glance (5)
  • 2 cans cannellini beans, rinsed and drained
  • 3 cups russet potatoes, peeled and diced into 1/2-inch cubes
  • 1 packet Italian seasoning
  • 4 cups vegetable broth
  • 2 cups fresh baby spinach, packed

Instructions

Setting the base

  1. Prepare the slow cooker base
Place the rinsed white beans into the bottom of the slow cooker. Scatter the diced potatoes evenly over the beans to ensure they cook through uniformly.
Look for The beans should be spread in an even layer at the bottom of the cooker.
Tip Ensure the potatoes are cut into uniform pieces so they soften at the same rate.

The beans and potatoes should be evenly distributed in the slow cooker. This ensures that the heat circulates efficiently and the potatoes cook at the same rate throughout the cooking time.

Adding liquid and seasoning

  1. Season and add liquid
Sprinkle the Italian seasoning packet over the potato layer. Pour the vegetable broth over the top until all ingredients are just submerged.
Look for The liquid should cover the potatoes, but do not overfill the slow cooker.
Tip If the seasoning is clumping, stir it gently into the broth once added.

The seasoning should be well-distributed over the potatoes, and the broth should cover the ingredients.

Check that the liquid level is sufficient to allow for gentle simmering and consistent heat distribution throughout the cooking process.

Final wilting

  1. Cook and incorporate spinach
Cover and cook on low for 4 to 6 hours. During the final 10 minutes of cooking, stir in the fresh baby spinach until wilted and the chowder is creamy.
Look for The spinach should be bright green and wilted into the creamy broth.
Tip The starch from the potatoes will naturally thicken the broth as it cooks.

The spinach should be incorporated into the hot soup until it is soft and wilted. The final mixture should be aromatic, creamy, and visually appealing with the green spinach dispersed.

Common mistakes

Avoid cutting the potatoes into pieces larger than half an inch, as larger chunks will take significantly longer to soften and may remain hard even after several hours of cooking.

Additionally, refrain from adding the spinach too early; if it cooks for the entire duration, it will lose its texture and color, resulting in a dull, unappealing appearance that lacks the fresh contrast intended for this dish.

How to tell it’s done

The chowder is ready when the potatoes are fork-tender and the broth has thickened into a creamy consistency. You can test a piece of potato by pressing it against the side of the slow cooker; it should give way easily with no resistance.

The spinach should be fully wilted but still maintain a vibrant green color, indicating it has been heated through without being overcooked.

Coming up in Part 3: common questions

  • Can this be made on the stovetop instead of a slow cooker?
  • Why does the chowder thicken so much after refrigerating?
  • Can frozen spinach be used instead of fresh?
