Tips for success
To achieve the ultimate sear on your chicken, pat the breasts completely dry with a paper towel. Moisture on the surface of the meat creates steam in the hot pan, which hinders the caramelization process and results in a pale, boiled appearance instead of a rich crust.
When adding the heavy cream, use a wooden spoon to vigorously scrape the bottom of the skillet.
Those caramelized browned bits, known as fond, contain concentrated flavors that dissolve into the cream, transforming a simple dairy base into an incredibly complex, restaurant-caliber pan sauce.
Variations
- Tuscan Chicken with Mushrooms: Sauté sliced cremini mushrooms along with the garlic and sun-dried tomatoes to add an earthy depth to the cream sauce.
- Spicy Tuscan Chicken: Add a half teaspoon of crushed red pepper flakes to the garlic and rosemary to give the cream sauce a subtle, warming kick.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to three days.
- Freezer
- Freezing is not recommended as the heavy cream sauce will likely separate and become grainy upon thawing.
- Reheat
- Reheat gently in a skillet over low heat, adding a splash of milk or water to loosen the cream sauce.
Allow any leftovers to cool to room temperature for no more than two hours to comply with food safety standards. Transfer the chicken and sauce into an airtight glass or plastic container, ensuring the chicken is submerged in the sauce to prevent it from drying out in the refrigerator.
While this dish is best enjoyed fresh, you can prep the ingredients a day in advance. Slice the tomatoes, mince the garlic, and chop the rosemary, storing them in separate containers in the fridge.
You can also sear the chicken ahead of time, but assemble the cream sauce just before serving.
Serving ideas
Serve this rich skillet dish hot, spooning generous amounts of the garlic cream sauce, wilted spinach, and sun-dried tomatoes directly over each chicken breast.
The vibrant colors of the green spinach and red tomatoes make an attractive presentation that requires very little extra garnishing.
This dish pairs wonderfully with a side of pasta, such as fettuccine or penne, which helps soak up the extra cream sauce.
For a lighter option, serve the chicken alongside roasted zucchini noodles or a crisp green salad tossed with a simple vinaigrette to balance the richness of the dairy.

Creamy Tuscan Chicken Skillet in One Pan

Ingredients
- 4 boneless skinless chicken breasts
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, sliced
- 1 tbsp fresh rosemary, finely chopped
- 1 cup heavy cream
- 2 cups fresh baby spinach
Instructions
- Heat a large heavy skillet over medium-high heat. Sear the chicken breasts for 5 to 6 minutes per side until they develop a beautiful deep golden-brown crust. Transfer the chicken to a clean plate and set aside.
- Lower the skillet heat to medium. Add the minced garlic, sliced sun-dried tomatoes, and chopped fresh rosemary to the skillet, sautéing for about 1 minute until fragrant.
- Pour the heavy cream into the skillet with the sautéed aromatics, scraping up any browned bits from the bottom of the pan to build deep flavor, and bring to a gentle simmer.
- Stir the fresh baby spinach into the simmering cream sauce, cooking for 1 to 2 minutes until the leaves wilt completely and integrate into the sauce.
- Return the seared chicken breasts to the skillet, spooning the hot garlic cream sauce over them. Simmer until the chicken reaches a safe internal temperature of 165°F (74°C) measured with a meat thermometer.
