Tips for success
For a truly luxurious sauce, use full-fat heavy cream and a good-quality parmesan. The starch from the gnocchi helps thicken the sauce naturally, so avoid the temptation to add extra flour or cornstarch.
If the sauce seems too thin before broiling, let it simmer for an extra minute or two; it will continue to thicken as it rests.
To get the perfect cheese pull, use freshly shredded mozzarella rather than pre-shredded, which often contains anti-caking agents that prevent smooth melting.
Broiling at a high heat for a short time gives the cheese a golden, blistered crust while keeping the interior creamy. For extra flavor, you can add a pinch of red pepper flakes or a sprinkle of fresh basil before serving.
Variations
- Add Mushrooms: Sauté 8 oz sliced cremini mushrooms with the garlic and sun-dried tomatoes until golden and their liquid has evaporated. This adds an earthy depth that complements the creamy sauce.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes with the garlic for a gentle heat. You can also use hot Italian sausage instead of chicken for a spicier, richer version.
- Vegetarian Version: Omit the chicken and use vegetable broth instead of chicken broth. Add an extra cup of spinach and maybe some artichoke hearts for a satisfying meatless dinner.
- Herb Swap: Replace the Italian seasoning with 1 tablespoon of fresh chopped rosemary and thyme. Add the fresh herbs with the garlic for a more aromatic, rustic flavor.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Not recommended for freezing, as the creamy sauce may separate and the gnocchi can become mushy.
- Reheat
- Reheat gently in a skillet over medium-low heat with a splash of broth or cream, stirring occasionally, until heated through.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The dish reheats well in the microwave or in a skillet over medium-low heat with a splash of broth or cream to loosen the sauce.
The gnocchi will absorb some sauce as it sits, so adding a little liquid when reheating helps restore the creamy texture.
This dish is best made fresh, but you can prepare the sauce and sear the chicken up to a day ahead. Store the cooked chicken and sauce separately in the refrigerator, then reheat gently before adding the gnocchi and spinach.
You can also assemble the entire dish (without the mozzarella) a few hours ahead, then top with cheese and broil just before serving.
Serving ideas
Serve this creamy Tuscan chicken gnocchi bake as a complete one-pan dinner. It pairs beautifully with a simple green salad dressed with lemon vinaigrette to cut through the richness. Crusty bread is perfect for sopping up the extra sauce. For a lighter side, steamed broccoli or sautéed green beans add color and freshness.
For a heartier meal, you can serve it alongside garlic bread or a bowl of roasted vegetables. The dish is satisfying on its own, but a sprinkle of fresh parsley or basil just before serving adds a pop of color and a fresh herbal note. Leftovers are just as delicious the next day, if they last that long.

Creamy Tuscan Chicken Gnocchi Bake in 30 Minutes

Ingredients
- 1 1/4 lb boneless skinless chicken breast, cubed
- 1 tbsp Italian seasoning
- 1 tsp salt
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes (in oil), drained and sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 lb potato gnocchi (uncooked)
- 3 cups baby spinach
- 1/2 cup grated parmesan cheese
- 1 cup shredded mozzarella cheese
Instructions
- In a large deep oven-safe skillet, heat the olive oil over medium-high heat. Season the cubed chicken with Italian seasoning and salt. Add the chicken to the skillet in a single layer and cook without stirring for 3–4 minutes until golden brown on the bottom. Flip and cook another 3–4 minutes until the chicken is cooked through and reaches 165°F (74°C) on an instant-read thermometer. Transfer the chicken to a plate and set aside.
- Reduce the heat to medium. Add the minced garlic and sliced sun-dried tomatoes to the same skillet with the drippings. Sauté for 1 minute, stirring constantly, until fragrant and the garlic is just starting to turn golden.
- Pour the heavy cream and chicken broth into the skillet. Stir well, scraping up any browned bits from the bottom. Bring the sauce to a gentle simmer and let it bubble for 2–3 minutes until it thickens slightly and becomes velvety.
- Add the uncooked gnocchi, baby spinach, seared chicken, and grated parmesan to the skillet. Gently fold everything together with a spatula, making sure the gnocchi are submerged in the sauce. Continue folding for 1–2 minutes until the spinach wilts and the sauce is evenly distributed.
- Sprinkle the shredded mozzarella evenly over the top of the gnocchi mixture. The cheese should cover the surface completely.
- Place the skillet under the broiler, about 6 inches from the heat. Broil for 3–5 minutes, watching closely, until the mozzarella is melted, blistered, and golden brown in spots. The sauce should be bubbling around the edges.
- Remove the skillet from the broiler and let it rest for 5 minutes. The sauce will thicken slightly as it rests. Scoop the gnocchi and chicken into warm bowls, making sure to get a generous spoonful of the creamy sauce and cheese from the bottom.
