Tips for success
To elevate this dish even further, consider toasting the spices in the dry skillet for a few seconds before adding the oil. This blooms the essential oils in the seasoning, making the herbs much more fragrant.
Additionally, when slicing the seared chicken, let it rest for about five minutes on a cutting board before cutting. This allows the juices to redistribute throughout the meat, ensuring every bite of chicken remains incredibly tender and juicy when tossed back into the warm pasta.
If the cream sauce appears to separate or look greasy, it is likely because the heat was too high when the cheese was added. To fix this, remove the skillet from the heat entirely and stir in a tablespoon of cold butter or a splash of warm pasta water, whisking vigorously.
This helps re-emulsify the fats and liquids, restoring the smooth, velvety texture of the sauce without thinning it out excessively.
Variations
- Spicy Tuscan Chicken Pasta: Add a pinch of crushed red pepper flakes along with the garlic to infuse the cream sauce with a subtle, warming heat.
- Gluten-Free Tuscan Pasta: Substitute the standard bowtie pasta with your favorite gluten-free short pasta shape and ensure the chicken is seasoned with gluten-free spices.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended as the cream sauce will separate and become grainy upon thawing.
- Reheat
- Reheat gently in a skillet over medium-low heat, adding a splash of milk or chicken broth to loosen the cream sauce.
Allow any leftovers to cool completely at room temperature for no more than two hours to ensure food safety. Store the pasta in an airtight container and place it in the refrigerator. Because pasta absorbs liquid as it sits, the sauce will thicken significantly overnight, so keeping a little extra broth or cream on hand for reheating is highly recommended.
While pasta is always best enjoyed fresh, parts of this dish can be prepared in advance. The chicken can be seasoned and seared a day ahead, then stored in the refrigerator until ready to slice and use. The garlic can also be minced and the sun-dried tomatoes chopped ahead of time, which streamlines the cooking process to under fifteen minutes when ready to serve.
Serving ideas
Serve this luxurious pasta warm, straight from the skillet, to preserve the silky texture of the cream sauce. Spoon generous portions into shallow bowls, making sure each serving gets a balanced mix of tender chicken, sun-dried tomatoes, and wilted spinach.
Garnish the top with an extra sprinkle of freshly grated parmesan cheese and a few cracks of freshly ground black pepper for a professional presentation.
Pair this rich, comforting dish with a crisp, green side salad dressed in a light vinaigrette to cut through the richness of the cream sauce.
A side of warm garlic bread or a crusty Italian baguette is also perfect for scooping up any extra sauce left at the bottom of the bowl. For beverages, a chilled glass of dry white wine, such as Pinot Grigio or Sauvignon Blanc, complements the flavors beautifully.

Creamy Tuscan Chicken Bowtie Pasta

Ingredients
- 8 oz bowtie pasta
- 1 lb chicken cutlets
- 1 tbsp seasoning
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 cup heavy cream
- 2 cups fresh baby spinach
- 1/2 cup grated parmesan cheese
Instructions
- Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to the package instructions until al dente. Drain the pasta, reserving a half cup of the starchy pasta water, and set aside.
- Season the chicken cutlets evenly on both sides with the seasoning. Heat a large skillet over medium-high heat. Add the chicken cutlets and sear for 3 to 4 minutes per side, until they are golden-brown and the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and set aside on a plate to rest.
- Reduce the heat to medium. In the same skillet with the leftover chicken drippings, add the minced garlic and chopped sun-dried tomatoes. Sauté for about 1 minute, stirring constantly, until the garlic is fragrant and softened, taking care not to let it burn.
- Pour the heavy cream into the skillet, scraping up the browned bits from the bottom of the pan with a wooden spoon. Bring the mixture to a gentle simmer and let it cook for 3 to 4 minutes until the sauce begins to thicken slightly.
- Stir the fresh baby spinach and grated parmesan cheese into the simmering cream sauce. Cook for 1 to 2 minutes, stirring gently, until the spinach is fully wilted and the parmesan cheese is completely melted and integrated into a smooth sauce.
- Slice the rested seared chicken into bite-sized strips. Add the cooked bowtie pasta and the sliced chicken back into the skillet with the sauce. Toss everything together over low heat for 1 minute until warmed through and coated. If the sauce is too thick, splash in a little reserved pasta water.
