Tips for success
For the most dramatic presentation, use a hollowed Grana Padano wheel that is at least 8 inches in diameter. If the wheel is too small, the pasta may not fit or the cheese may not melt evenly.
Warm the wheel before adding the pasta to prevent thermal shock and ensure a smooth melt. Use tongs to toss the pasta, scraping the sides of the wheel to incorporate the melted cheese. Work quickly, as the pasta will cool and the cheese will stiffen.
To get paper-thin truffle shavings, use a truffle shaver or a mandoline set to the thinnest setting. If fresh truffles are unavailable, drizzle a little extra truffle oil over the finished dish, but do so sparingly — a little goes a long way.
For a richer sauce, you can add an extra tablespoon of butter, but the recipe is already decadent. Balance the salt carefully, as the cheese and truffle butter are both salty.
Variations
- Chicken Truffle Alfredo: Add sliced grilled chicken breast to the pasta before tossing in the cheese wheel. Cook the chicken separately and slice it thinly, then fold it in during the final toss. This adds protein and makes the dish more substantial.
- Mushroom Truffle Fettuccine: Sauté 200g of sliced cremini or porcini mushrooms in butter until golden, then add them to the sauce. The earthy flavor of mushrooms pairs beautifully with truffle and cheese. Stir into the pasta before plating.
- Vegan Truffle Pasta: Use a high-quality vegan fettuccine (check that it's egg-free), replace butter with vegan butter, and use a plant-based cream alternative. Omit the Grana Padano and instead use a vegan parmesan-style cheese. Truffle oil and shavings are naturally vegan.
- Spicy Truffle Alfredo: Add a pinch of red pepper flakes or a finely minced fresh chili to the butter while it melts. The heat contrasts nicely with the creamy sauce and earthy truffle. Adjust the amount to taste.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently with a splash of milk or water to restore the creamy texture.
- Freezer
- Freezing is not recommended, as the creamy sauce may separate and the pasta will become mushy upon thawing.
- Reheat
- Reheat in a skillet over low heat, adding a splash of milk or pasta water to loosen the sauce. Stir frequently until heated through.
Leftover truffle fettuccine can be stored in an airtight container in the refrigerator for up to 2 days. The sauce may thicken as it cools; when reheating, add a splash of milk or pasta water to loosen it. For best results, reheat gently on the stovetop over low heat, stirring frequently. Avoid microwaving, as it can make the pasta rubbery and the sauce oily.
The cheese wheel can be prepared a day in advance by hollowing it out and wrapping it tightly in plastic wrap. The sauce can be made up to 2 hours ahead and kept warm in a saucepan over low heat, stirring occasionally. Cook the pasta just before serving to ensure the best texture. The truffle shavings should be added at the last moment to preserve their aroma.
Serving ideas
Serve the truffle fettuccine immediately after plating, while the pasta is still steaming and the cheese is molten. The dish is rich, so pair it with a light green salad dressed with lemon vinaigrette to cut through the creaminess.
A glass of dry sparkling wine, such as Franciacorta or Prosecco, complements the truffle and cheese beautifully. For a more casual meal, serve with crusty bread to mop up any remaining sauce from the wheel.
This pasta is best enjoyed as a main course for lunch or dinner, accompanied by a simple vegetable side like sautéed spinach or roasted asparagus. The portions are generous, so one serving is satisfying on its own.
If serving as a first course, divide the recipe into six smaller portions. Leftover sauce from the wheel can be spooned over the pasta or used as a dip for bread.

Creamy Truffle Fettuccine Alfredo Swirled in a Cheese Wheel

Ingredients
- 400 g fresh egg fettuccine
- 80 g European unsalted butter
- 150 ml heavy cream
- 100 g freshly grated Grana Padano
- 2 tbsp black truffle butter
- 1 tsp black truffle oil
- freshly shaved black summer truffle, for serving
- sea salt, to taste
- cracked black pepper, to taste
Instructions
- Bring a large pot of water to a rolling boil. Season generously with sea salt until the water tastes like the sea. Add the fresh egg fettuccine and cook for exactly 2 minutes, stirring occasionally, until just al dente. Reserve 1 cup of the starchy pasta water before draining, then drain the pasta in a colander. Do not rinse.
- In a wide skillet over medium heat, melt the European unsalted butter and black truffle butter together, swirling the pan gently. Cook until the butter is fully melted and just begins to foam, about 1 minute. Do not let it brown. Add the heavy cream and black truffle oil, then whisk to combine. Bring the mixture to a gentle simmer, then reduce the heat to low.
- Ladle about 1/2 cup of the reserved starchy pasta water into the skillet with the cream mixture. Whisk continuously as the sauce comes back to a gentle simmer. The starch in the water helps bind the sauce and gives it a silky, clingy texture. Continue whisking for 1-2 minutes until the sauce thickens slightly and coats the back of a spoon.
- If using a hollowed Grana Padano wheel, place it on a sturdy serving platter or tray. Carefully transfer the hot, drained fettuccine into the hollowed wheel. If not using a wheel, transfer the pasta to a large warm bowl. The residual heat from the pasta is essential for the next step.
- Using tongs, toss the hot pasta inside the cheese wheel, scraping the inner walls as you go. The heat will melt the cheese, creating a creamy, emulsified glaze. Continue tossing vigorously for 1-2 minutes, adding splashes of the warm cream sauce from the skillet as needed to keep the pasta glossy and well coated.
- Sprinkle the freshly grated Grana Padano over the pasta in the wheel, then toss again to incorporate. The cheese will melt into the sauce, enriching it and adding a savory depth. If the sauce becomes too thick, stir in a little more reserved pasta water to loosen it to a silky consistency.
- Using tongs, twirl a portion of the fettuccine into a neat nest and lift it from the wheel. Place the twirled pasta onto a warmed serving plate. Repeat with the remaining pasta, dividing it evenly among plates. Drizzle any extra sauce from the wheel over each serving.
- Just before serving, shave thin slices of fresh black summer truffle over each plate using a truffle shaver or a very sharp knife. Finish with a few cracks of black pepper and a pinch of sea salt if desired. Serve immediately while the pasta is hot and the truffle aroma is at its peak.
