Before you start

Before starting, make sure the slow cooker is clean and dry. If the ground turkey is very cold, let it sit at room temperature for up to 30 minutes (but no longer) before adding to the slow cooker.

Cube the cream cheese if not already cubed. Measure the frozen corn and taco seasoning. Have a wooden spoon or spatula ready for stirring at the end. No other prep is needed.

Ingredients at a glance (4)
  • 1 1/2 lb ground turkey
  • 3 cups frozen sweet corn
  • 1 oz taco seasoning (about 2 tbsp)
  • 8 oz cream cheese, cubed

Instructions

Layer the ingredients

  1. Add the turkey
Place the ground turkey in the bottom of the slow cooker, breaking it up slightly with a spoon or spatula so it covers the bottom evenly. It is fine if it is in larger chunks; the turkey will break apart as it cooks.
Look for The turkey covers the bottom of the slow cooker in an even layer.
Tip If the turkey is very cold, let it sit at room temperature for up to 30 minutes before adding to the slow cooker.
  2. Scatter the corn
Scatter the frozen sweet corn evenly over the ground turkey. There is no need to thaw the corn first; it will cook perfectly in the slow cooker and add sweetness and texture to the chili.
Look for The corn is spread in a single layer over the turkey.
Tip Frozen corn works best here because it holds its shape and doesn't turn mushy.
  3. Sprinkle the seasoning
Sprinkle the taco seasoning evenly over the corn and turkey. Use a spoon or your fingers to distribute the seasoning as evenly as possible, so every bite has flavor.
Look for The seasoning coats the corn and turkey in a light, even layer.
Tip If using a homemade taco seasoning, adjust the amount to your preferred spice level.
  4. Top with cream cheese
Place the cubed cream cheese on top of the seasoned turkey and corn. Do not stir; the cream cheese will melt slowly as the chili cooks, creating a creamy sauce.
Look for Cubes of cream cheese sit on top of the corn and turkey.
Tip Cubing the cream cheese helps it melt more quickly and evenly.

The slow cooker is filled with raw turkey, a layer of frozen corn, a dusting of taco seasoning, and cubes of cream cheese on top.

The colors are vibrant: pink turkey, yellow corn, and white cream cheese. The aroma is already inviting, with the spice from the taco seasoning and the sweet scent of corn.

Slow cook and melt

  1. Cook on low
Cover the slow cooker and cook on low for 4 to 6 hours, or until the turkey is cooked through and reaches an internal temperature of 165°F (74°C). The chili will be bubbling around the edges and the cream cheese will be fully melted.
Look for The chili is bubbling and the cream cheese has melted into the sauce.
Safe temperature 165°F (74°C) internal temperature (ground meat)
Tip Cooking on low gives the flavors time to meld and keeps the turkey tender.
  2. Stir to combine
After the cooking time is complete, stir the chili thoroughly to combine the melted cream cheese with the turkey and corn. The sauce should be creamy and slightly thickened. If the chili seems too thick, stir in a splash of chicken broth or water to reach the desired consistency.
Look for The sauce is smooth, creamy, and coats the turkey and corn.
Tip Stirring at the end ensures the cream cheese is fully incorporated.

After a few hours on low, the slow cooker is bubbling gently around the edges. The turkey is no longer pink and the cream cheese has melted into a creamy sauce. The kitchen smells of warm spices and sweet corn. The chili looks glossy and inviting, with the sauce coating the turkey and corn.

Stir and serve

  1. Serve warm
Ladle the chili into bowls and serve warm. This chili is delicious on its own or topped with your favorite chili toppings like shredded cheese, sour cream, or chopped cilantro.
Look for The chili is hot, creamy, and steaming in serving bowls.
Tip For a complete meal, serve with cornbread or tortilla chips.

The chili is stirred until the sauce is smooth and creamy. It has a rich, golden color with pops of yellow corn. The texture is thick and hearty, and the steam rises from the bowl. A taste reveals a balance of savory turkey, sweet corn, and mild spice, with a velvety finish from the cream cheese.

Common mistakes

One common mistake is not letting the chili cook long enough; the turkey must reach 165°F (74°C) to be safe. Another is stirring too early, which can break up the turkey before it has a chance to brown slightly.

Avoid adding extra liquid unless the chili seems too thick, as the frozen corn releases moisture during cooking. Finally, be careful not to overcook, as the turkey can become dry if left too long.

How to tell it’s done

The chili is done when the turkey is cooked through and reaches an internal temperature of 165°F (74°C). The cream cheese should be fully melted and the sauce should be creamy and slightly thickened.

The corn should be tender but still hold its shape. The chili will be bubbling around the edges of the slow cooker. Stir well before serving to combine all the flavors.

  • Ground meat: 160°F (71°C) in the thickest part
  • Poultry: 165°F (74°C) in the thickest part
