Tips for success
To achieve an even crispier crust, pat the chicken breasts dry with paper towels before seasoning and placing them in the hot skillet.
Excess moisture on the surface of the chicken will create steam, which prevents the Maillard reaction necessary for that deep, golden-brown color you want.
If you prefer a bolder flavor, consider adding a pinch of red pepper flakes to the cream cheese mixture or incorporating a dash of lemon zest. These small additions can brighten the richness of the cheese and provide a subtle contrast that makes the dish feel even more sophisticated.
Variations
- Sun-Dried Tomato Twist: Add two tablespoons of finely chopped sun-dried tomatoes to the cream cheese and spinach mixture. This adds a sweet and tangy depth that pairs exceptionally well with the savory notes of the chicken.
- Garlic Herb Infusion: Sauté two cloves of minced garlic in the skillet before adding the pasta water. This simple step infuses the entire sauce with a fragrant garlic aroma that elevates the dish significantly.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days in the refrigerator.
- Freezer
- Freezing is not recommended as the creamy sauce and pasta texture may change significantly upon thawing.
- Reheat
- Gently reheat in a skillet over low heat with a splash of water or broth to loosen the sauce.
Store any leftovers in an airtight container to maintain moisture. The pasta and chicken can be stored together, but keep in mind that the sauce may thicken as it cools.
If you plan to keep leftovers for more than a day, storing the components separately is recommended to maintain the best texture for both the chicken and the pasta.
You can prepare the chicken stuffing up to 24 hours in advance and keep it refrigerated. However, it is best to stuff and sear the chicken just before serving to ensure the meat remains juicy and the crust stays crisp.
The pasta can be boiled slightly ahead of time and tossed in a bit of olive oil to prevent sticking until you are ready to finish the sauce.
Serving ideas
Serve this dish immediately while the chicken is hot and the pasta is still steaming. A simple side salad with a light vinaigrette provides a refreshing contrast to the richness of the creamy pasta and stuffed chicken, helping to balance the meal and cleanse the palate between bites.
For a beautiful presentation, arrange the pasta in the center of the plate and place the sliced stuffed chicken on top, fanning out the slices to show off the vibrant green spinach and creamy filling.
A final sprinkle of freshly grated parmesan or a touch of fresh herbs can enhance the visual appeal of the dish.

Creamy Stuffed Chicken with Spinach Rigatoni

Ingredients
- 4 pieces chicken breast, boneless and skinless
- 8 oz cream cheese, softened
- 2 cups fresh spinach, chopped
- 1 lb rigatoni pasta
- 1/2 cup parmesan cheese, freshly grated
Instructions
- Combine the softened cream cheese with the chopped fresh spinach in a medium bowl until well incorporated. Use a sharp knife to cut a deep pocket into the side of each chicken breast, being careful not to cut all the way through. Stuff each pocket generously with the spinach and cream cheese mixture. Keep the chicken refrigerated until ready to cook, removing it only 30 minutes before searing.
- Heat a large skillet over medium-high heat with a drizzle of oil. Carefully place the stuffed chicken breasts into the pan and sear until golden brown on both sides. Continue cooking until the chicken reaches an internal temperature of 165°F (74°C). Remove from the pan and let the chicken rest for 5 minutes before slicing.
- While the chicken is cooking, bring a large pot of salted water to a boil. Add the rigatoni and cook according to the package instructions until al dente. Reserve a small amount of the pasta water, then drain the rigatoni in a colander.
- In the same skillet used for the chicken, combine the reserved pasta water and parmesan cheese over low heat, stirring until a smooth, creamy sauce forms. Add the cooked rigatoni to the skillet and toss to coat thoroughly. Plate the creamy pasta and top with the sliced herb-crusted stuffed chicken.
