Tips for success
For the best flavor, use fresh strawberries when they are in season, but frozen work just as well. When reducing the puree, aim for a thick, jam-like consistency; this concentrates the flavor and prevents the cheesecake from becoming watery.
If your puree is too thin, you can add a little cornstarch slurry to thicken it. Let the puree cool completely before swirling to avoid melting the batter.
To get clean, professional-looking slices, use a large chef's knife and wipe it with a damp cloth between cuts. For even cleaner cuts, dip the knife in hot water and dry it before slicing.
If the bars are too soft, chill them in the freezer for 30 minutes before cutting. For a more intense strawberry flavor, you can add a few drops of strawberry extract to the frosting.
Variations
- Chocolate Swirl: Replace the strawberry puree with warm chocolate ganache for a chocolate cheesecake bar. Use chocolate sandwich cookies for the crust and skip the strawberry topping, using crushed chocolate cookies instead.
- Lemon Blueberry: Swap the strawberry puree with lemon curd and swirl in fresh blueberry compote. Use a shortbread crust and top with a lemon-scented crunch made from crushed vanilla wafers and freeze-dried blueberries.
- Peach Melba: Use reduced peach puree and raspberry puree for a double swirl. Use a graham cracker crust and top with a pecan and raspberry crunch. This variation is perfect for summer.
- Cookies and Cream: Fold crushed chocolate sandwich cookies into the cheesecake filling. Use a chocolate cookie crust and top with a crunch made from crushed cookies and white chocolate. Omit the strawberry puree for a classic cookies and cream flavor.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 5 days. The crunch may soften; for best texture, add fresh topping before serving.
- Freezer
- Freeze the bars (without the crunch topping) for up to 2 months. Thaw overnight in the refrigerator. Add the topping after thawing.
- Reheat
- These bars are best served cold. If desired, let them sit at room temperature for 10 minutes before serving. Do not microwave, as it will melt the frosting.
Store the strawberry crunch cheesecake bars in an airtight container in the refrigerator for up to 5 days. The crunch topping may soften over time, but the bars will still be delicious. If you want to keep the crunch longer, store the topping separately and add it just before serving. For best quality, consume within 3 days.
These cheesecake bars are perfect for making ahead. You can prepare the entire recipe up to 2 days in advance and keep it covered in the refrigerator. The flavors meld together and the texture improves after a day.
You can also make the crust and the strawberry puree up to 3 days ahead and store them separately. Assemble and bake the cheesecake the day before you plan to serve it.
Serving ideas
Serve the cheesecake bars chilled for the best texture and flavor. They are wonderful on their own, but you can also pair them with a scoop of vanilla ice cream or a drizzle of strawberry sauce for an extra indulgent dessert. For a pretty presentation, garnish with fresh mint leaves or additional freeze-dried strawberry pieces.
These bars are great for parties, picnics, and bake sales. Cut them into smaller squares for a bite-sized treat. They also freeze well, so you can keep some on hand for unexpected guests.
If serving after a meal, allow them to sit at room temperature for 5-10 minutes before serving to take the chill off, but keep them cold enough to maintain the clean slices.

Strawberry Crunch Cheesecake Bars with Golden Cookie Crust

Ingredients
- 2 cups golden Oreo crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 2 tsp vanilla extract
- 3 large eggs
- 1/2 cup heavy cream
- 180 g reduced strawberry puree
- 150 g golden Oreos
- 40 g freeze-dried strawberries
- 50 g unsalted butter, melted
- 1 cup whipped cream frosting
Instructions
- Preheat the oven to 325°F (163°C). Line a 9x9-inch baking pan with aluminum foil, leaving overhang on two sides. In a food processor, pulse the golden Oreo crumbs until finely ground. Add the melted butter and pulse until the mixture resembles wet sand. Press the crumb mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool slightly.
- In a small saucepan, combine fresh or frozen strawberries with a little water and sugar. Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens to a jam-like consistency. You should have about 180 g of reduced puree. Let it cool completely before using.
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Add the sugar and vanilla and beat until creamy. Add the eggs one at a time, beating well after each addition. With the mixer on low, add the heavy cream and mix just until combined. Be careful not to overmix.
- Pour the cheesecake filling over the cooled crust. Drop spoonfuls of the reduced strawberry puree over the top. Use a knife or skewer to gently swirl the puree into the batter, creating a marbled pattern. Be careful not to over-swirl, as the puree will sink during baking.
- Place the pan in the preheated oven and bake at 325°F (163°C) for 40 minutes, or until the edges are set and the center is slightly glossy but no longer jiggly. The internal temperature should reach 160°F (71°C) for food safety. Remove from the oven and let cool completely on a wire rack.
- In a food processor, pulse the golden Oreos and freeze-dried strawberries until coarsely ground. Transfer to a bowl and pour in the melted butter. Stir until the mixture is evenly moistened. The topping should form clumps when pressed together.
- Once the cheesecake is completely cool, refrigerate for at least 4 hours or overnight. When fully chilled, spread the whipped cream frosting over the top. Sprinkle the strawberry crunch topping evenly over the frosting, pressing gently to adhere.
- Use the foil overhang to lift the cheesecake out of the pan. Place on a cutting board and slice into 12 bars with a sharp knife. Wipe the knife clean between cuts for neat edges. Serve chilled.
