Before you start

Before starting, make sure the cream cheese is softened to room temperature. This ensures a smooth, lump-free filling. Also, prepare the reduced strawberry puree ahead of time so it has time to cool completely. You can make it up to two days in advance and store it in the refrigerator.

Line your 9x9-inch pan with aluminum foil, leaving overhang on two sides, so you can easily lift the cheesecake out later. Preheat your oven to 325°F (163°C) and have all your ingredients measured and ready to go.

Ingredients at a glance (12)
  • 2 cups golden Oreo crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup heavy cream
  • 180 g reduced strawberry puree
  • 150 g golden Oreos
  • 40 g freeze-dried strawberries
  • 50 g unsalted butter, melted
  • 1 cup whipped cream frosting

Instructions

Crust and Preparation

  1. Make the Crust
Preheat the oven to 325°F (163°C). Line a 9x9-inch baking pan with aluminum foil, leaving overhang on two sides. In a food processor, pulse the golden Oreo crumbs until finely ground. Add the melted butter and pulse until the mixture resembles wet sand. Press the crumb mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool slightly.
Look for The crust should be fragrant and lightly golden at the edges.
Tip Press the crust firmly with the bottom of a measuring cup for an even layer.
  2. Prepare the Strawberry Puree
In a small saucepan, combine fresh or frozen strawberries with a little water and sugar. Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens to a jam-like consistency. You should have about 180 g of reduced puree. Let it cool completely before using.
Look for The puree should coat the back of a spoon and be deep red.
Tip For a smoother puree, blend after cooking and strain through a fine-mesh sieve.

The crust should be firm and lightly golden after baking. The strawberry puree should be thick and glossy, with a deep red color. It should coat the back of a spoon. This phase sets the foundation for the cheesecake, so take care to press the crust evenly and cool the puree completely before using.

Filling and Baking

  1. Make the Cheesecake Filling
In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Add the sugar and vanilla and beat until creamy. Add the eggs one at a time, beating well after each addition. With the mixer on low, add the heavy cream and mix just until combined. Be careful not to overmix.
Look for The batter should be smooth, creamy, and free of lumps.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Make sure the cream cheese is truly softened to avoid lumps.
  2. Assemble and Swirl
Pour the cheesecake filling over the cooled crust. Drop spoonfuls of the reduced strawberry puree over the top. Use a knife or skewer to gently swirl the puree into the batter, creating a marbled pattern. Be careful not to over-swirl, as the puree will sink during baking.
Look for The swirls should be distinct but evenly distributed.
Tip Use a light hand when swirling to keep the pattern visible.
  3. Bake the Cheesecake
Place the pan in the preheated oven and bake at 325°F (163°C) for 40 minutes, or until the edges are set and the center is slightly glossy but no longer jiggly. The internal temperature should reach 160°F (71°C) for food safety. Remove from the oven and let cool completely on a wire rack.
Look for The cheesecake should be set around the edges and slightly soft in the center.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Baking in a water bath is optional but can help prevent cracks.

The cheesecake filling should be smooth and creamy, with no lumps. After swirling, the top should have beautiful marbled patterns. During baking, the edges will set first, and the center will gently puff.

The cheesecake is ready when the center no longer jiggles and the internal temperature reaches 160°F (71°C). The kitchen will smell of vanilla and strawberries.

Topping and Chilling

  1. Make the Crunch Topping
In a food processor, pulse the golden Oreos and freeze-dried strawberries until coarsely ground. Transfer to a bowl and pour in the melted butter. Stir until the mixture is evenly moistened. The topping should form clumps when pressed together.
Look for The topping should be crumbly with visible pink and golden pieces.
Tip Do not over-process; you want some texture in the crunch.
  2. Chill and Frost
Once the cheesecake is completely cool, refrigerate for at least 4 hours or overnight. When fully chilled, spread the whipped cream frosting over the top. Sprinkle the strawberry crunch topping evenly over the frosting, pressing gently to adhere.
Look for The cheesecake should be firm and cold before frosting.
Tip Chill the frosted bars for 30 minutes before slicing for clean cuts.
  3. Slice and Serve
Use the foil overhang to lift the cheesecake out of the pan. Place on a cutting board and slice into 12 bars with a sharp knife. Wipe the knife clean between cuts for neat edges. Serve chilled.
Look for The bars should have clean edges and a visible swirl.
Tip For extra clean slices, dip the knife in hot water and dry before cutting.

The crunch topping should be crumbly and evenly coated with butter. When pressed onto the frosting, it should adhere well. After chilling, the cheesecake should be firm enough to slice cleanly. The bars should have a neat appearance with a visible swirl and a generous layer of crunch on top.

Common mistakes

One common mistake is overmixing the cheesecake batter, which can incorporate too much air and cause cracks during baking. Mix on low speed just until combined. Another issue is over-swirling the strawberry puree; if you swirl too much, the puree can sink and create a muddy pattern.

Use a light hand. Also, make sure the cheesecake is completely chilled before slicing; otherwise, the bars will be soft and messy. Finally, don't skip the foil lining, as it makes removal much easier.

How to tell it’s done

The cheesecake is done when the edges are set and the center is slightly glossy but no longer jiggly. The internal temperature should read 160°F (71°C) on an instant-read thermometer. If the center still wobbles, bake for an additional 5 minutes and check again.

After baking, the cheesecake will continue to set as it cools. Let it cool completely on a wire rack, then refrigerate for at least 4 hours or overnight. This chilling time is essential for clean slices and the best texture.
