Tips for success
To achieve the most balanced flavor, adjust the amount of red chili flakes based on your preference for heat.
Start with half a teaspoon if you prefer a milder dish, or increase up to two teaspoons if you enjoy a significant spicy kick. Remember that the spice level can intensify slightly as the sauce reduces.
Keep a little extra starchy pasta water on the side before draining the pasta. If the sauce becomes too thick while you are tossing it with the cheese and butter, a small splash of this water is the perfect way to loosen the sauce and maintain that glossy, professional-looking finish.
Variations
- Vegetable Boost: Stir in a handful of fresh baby spinach during the final minute of tossing the pasta to add color and a mild earthy flavor without changing the dish's profile.
- Protein Addition: Add cooked, sliced Italian sausage or seared shrimp during the final tossing step to turn this side dish into a more substantial, filling main course.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container for up to 2 days.
- Reheat
- Reheat gently in a skillet over low heat, adding a splash of water or cream to restore the sauce's consistency.
Store any leftovers in an airtight container in the refrigerator to keep the sauce from drying out. Because the sauce is dairy-based, it is best consumed within two days.
When reheating, it is helpful to add a tablespoon of water or cream to help restore the original creamy consistency of the emulsion, as the pasta will absorb much of the liquid while sitting in the fridge.
While this pasta is best served immediately, you can prepare the sauce base (up to the point before adding the pasta) in advance.
Keep the sauce in the refrigerator and reheat it gently in a skillet until warm, then boil your fresh pasta and finish the dish by combining everything together. This saves time during a busy evening while still delivering a fresh, restaurant-quality meal.
Serving ideas
Serve this spicy vodka rigatoni in warmed wide-rimmed bowls to help maintain the temperature of the creamy sauce.
The warmth of the bowl ensures the sauce remains glossy and doesn't thicken too quickly while you are eating, allowing you to enjoy the velvety texture until the very last bite.
Accompany the pasta with a simple side of crusty bread to soak up any remaining sauce left on the plate. The contrast between the crunchy bread and the soft, creamy pasta adds a wonderful texture to the meal, making it a complete and deeply satisfying dining experience for any occasion.

Creamy Spicy Vodka Rigatoni Pasta

Ingredients
- 3 tbsp olive oil
- 1 shallot, minced
- 2 cloves garlic, minced
- 2 tbsp double-concentrated tomato paste
- 2 tbsp vodka
- 1 cup heavy cream
- 1 tsp red chili flakes
- 300 g bronze-cut rigatoni, cooked al dente
- 1/4 cup starchy pasta water
- 1 tbsp cold butter
- 1/3 cup parmesan cheese, freshly grated
- Fresh basil leaves, torn, for serving
- Freshly cracked black pepper, for serving
Instructions
- Place a deep stainless steel skillet over medium heat and add the olive oil. Once the oil is shimmering, add the minced shallot and garlic. Sauté them gently until fragrant and softened, then stir in the tomato paste. Cook the mixture, stirring constantly, until the paste turns a deep crimson color and begins to caramelize, releasing a sweet and savory aroma.
- Pour the vodka into the skillet to deglaze, scraping up any browned bits from the bottom. Let the liquid simmer for two minutes to cook off the raw alcohol. Pour in the heavy cream and add the red chili flakes. Stir continuously until the sauce combines into a smooth, vibrant pink color. Keep the heat at a gentle simmer.
- Transfer the cooked al dente rigatoni directly into the skillet. Pour in the starchy pasta water and toss everything together to coat the noodles. Add the cold butter and the freshly grated parmesan cheese, swirling the pan vigorously to melt the cheese and butter into a glossy, clinging sauce. Garnish with torn fresh basil and freshly cracked black pepper before serving immediately.
