Tips for success

For a more sophisticated presentation, serve the custard in individual ramekins rather than a large dish. If you choose this method, reduce the cooking time significantly, as smaller portions set much faster than a single large batch. Keep a close eye on the internal temperature, as individual servings can go from perfectly set to overcooked in a matter of minutes.

If you prefer a sweeter custard, you can increase the amount of sugar slightly, but be aware that too much sugar can sometimes interfere with the setting process of the eggs.

Experimenting with a pinch of cinnamon or a drop of vanilla extract can also add subtle layers of flavor to the custard, enhancing the natural richness of the milk and eggs without overpowering the classic taste.

Variations

  • Spiced Vanilla Custard: Add a pinch of ground cinnamon or cardamom along with the nutmeg to introduce warm, complex spice notes that complement the rich vanilla base perfectly.
  • Citrus Infused Custard: Stir in a teaspoon of finely grated lemon or orange zest before cooking to provide a bright, fragrant contrast to the creaminess of the milk and eggs.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days in the refrigerator.
Reheat
Reheating is not recommended, as it can cause the custard to separate or curdle.

Store any leftover custard in an airtight container to prevent it from absorbing other flavors in the refrigerator. It is best to cover the surface directly with plastic wrap to prevent a skin from forming while it cools.

Proper storage is essential to maintain the moisture and delicate texture of the custard, ensuring that it remains delicious for several days after the initial preparation.

This custard is an excellent make-ahead dessert, as it actually benefits from chilling in the refrigerator for several hours or even overnight. Preparing it in advance allows the flavors to meld and the texture to become even smoother and more set.

Simply cover the dish tightly and store it in the coldest part of the refrigerator until you are ready to serve, ensuring it remains at a safe temperature.

Serving ideas

Serve the custard chilled or at room temperature for the best experience. The silky texture pairs beautifully with a light dusting of fresh nutmeg or a few berries on the side to provide a slight contrast in acidity and texture. Because the custard is rich, smaller portions are often more satisfying, making it an ideal dessert to serve after a hearty meal.

When plating the custard, use a warm spoon to help create clean, smooth scoops. If serving from individual dishes, you can present them directly as they are, perhaps garnished with a small mint leaf for a pop of color.

The simplicity of the dessert makes it versatile enough to be dressed up with various toppings or served elegantly on its own to showcase its perfect, creamy consistency.

Frequently asked questions

Can this custard be made in a standard oven?
Yes, it can be baked in an oven using a bain-marie. Place the custard dish inside a larger pan filled with hot water to ensure gentle, even heat distribution, and bake at 325°F (163°C) until set.
Why is the custard watery after cooking?
A watery custard usually indicates that it was not cooked long enough to allow the egg proteins to fully set, or the temperature was too low. Ensure the internal temperature reaches 160°F (71°C).
Can a different type of milk be used?
Whole milk is recommended for the best texture. Using lower fat milk may result in a thinner, less creamy custard, while using heavy cream will make the final dish significantly richer and denser.

Ingredients

  • 4 eggs
  • 1/2 cup granulated sugar
  • 1/4 tsp ground nutmeg
  • 2 cups whole milk

Instructions

  1. Crack the eggs directly into the bottom of the slow cooker ceramic insert. Add the granulated sugar, ground nutmeg, and the whole milk into the cooker.
  2. Cover the slow cooker and cook on low heat. To cook the eggs through to a safe internal temperature of 160°F (71°C), continue cooking until the center is firm. The soft, traditional version is achieved before this point.
  3. Carefully remove the ceramic insert from the base and allow the custard to rest at room temperature for at least 30 minutes before serving. This cooling time allows the structure of the custard to stabilize properly for the best texture.
Contains: eggs, milk
Food safety: This custard is served soft and not fully set. Use pasteurised eggs for pregnant women, young children, older adults and anyone with a weakened immune system.
