Tips for success

For the smoothest queso, always use freshly shredded cheese or cheese that you cube yourself. Pre-shredded cheese often contains anti-caking agents that can make the dip grainy.

Also, make sure the cream cheese is softened to room temperature before adding it to the slow cooker; this helps it melt more quickly and evenly.

If the queso thickens too much as it sits, stir in a splash of milk or half-and-half to loosen it. You can also keep it on the WARM setting, but if it stays on too long, it may thicken. If you’re making this ahead, reheat gently on LOW, stirring occasionally, and add a little milk if needed.

Variations

  • Spicy Chorizo Queso: Add 2 finely chopped chipotle peppers in adobo sauce along with the chorizo for a smoky, fiery kick. Reduce the jalapeño to 1/2 to balance the heat, or leave it for extra spice.
  • Beef and Bean Queso: Replace the chorizo with 1 lb ground beef seasoned with chili powder and cumin, and add 1 cup drained black beans when layering. This heartier version is great for a main-dish dip.
  • Veggie Queso: Skip the chorizo and add 1 cup sautéed mushrooms and 1/2 cup roasted corn for a vegetarian option. The mushrooms add umami, and the corn brings sweetness.
  • Smoky Queso with Bacon: Substitute the chorizo with 8 oz cooked, crumbled bacon, and add 1 tsp smoked paprika to the slow cooker. The bacon adds a smoky, salty depth that pairs beautifully with the creamy cheese.

Leftover queso can be stored in an airtight container in the refrigerator for up to 4 days. Let it cool for no more than 2 hours before refrigerating.

You can brown the chorizo and prep the vegetables up to 2 days ahead and keep them in the refrigerator.

Assemble the queso in the slow cooker insert and refrigerate overnight; then cook on LOW for 2 hours the next day. Or, cook the queso fully, let it cool, and refrigerate; reheat gently as directed.

Serving ideas

Serve this queso warm straight from the slow cooker, with a basket of tortilla chips on the side. The chips should be sturdy enough to scoop up the thick dip without breaking.

For a party, you can also offer sliced baguette, pretzel bites, or fresh vegetables like celery and bell pepper strips for dipping.

Garnish with extra pico de gallo, chopped cilantro, or sliced jalapeños for a pop of color and freshness. This dip is rich, so a little goes a long way. It’s perfect for game day spreads, potlucks, or any casual gathering where you want a satisfying, crowd-pleasing appetizer.

Frequently asked questions

Can this queso be made without a slow cooker?
Yes, melt the cheeses in a heavy saucepan over low heat, stirring constantly, or in a double boiler. Add the remaining ingredients and stir until smooth. Keep warm in a fondue pot or a warm slow cooker.
Why did your queso turn grainy?
Graininess usually happens when the cheese is overheated or when pre-shredded cheese is used. To avoid this, always use block cheese that you cube yourself, and cook on LOW heat. Stir gently and avoid boiling.
Can this recipe be doubled?
Yes, this recipe can be doubled in a larger slow cooker (at least 8 quarts). Increase the cooking time slightly, about 30 minutes, and stir occasionally to ensure even melting.
What is the best cheese for queso blanco?
White American cheese is ideal because it melts smoothly and has a mild, creamy flavor. A mix of Monterey Jack and white cheddar also works, but you may need to add extra cream cheese to keep it creamy.
Can the chorizo be omitted for a milder dip?
Yes, simply omit the chorizo and the queso will still be delicious. To keep some savory depth, add 1/2 teaspoon of smoked paprika and 1/2 teaspoon of ground cumin to the slow cooker.

Slow-Cooker Chorizo Queso Blanco Dip

Prep 15 minCook 2 hTotal 2 h 15 minServes 16
A creamy white chorizo queso dip in a black ceramic slow cooker, garnished with fresh cilantro and pico de gallo.

Ingredients

  • 2 lb white American cheese, cubed
  • 8 oz cream cheese, softened and cubed
  • 1 lb fresh Mexican chorizo, browned and drained
  • 1 cup diced tomatoes with green chiles, drained
  • 1 jalapeño, seeded and finely chopped
  • Pico de gallo, for serving
  • Chopped fresh cilantro, for serving
  • Tortilla chips, for serving

Instructions

  1. Heat a large skillet over medium-high heat. Add the fresh Mexican chorizo and cook, breaking it up with a wooden spoon, until browned and cooked through, about 8 minutes. The chorizo should reach 160°F (71°C) on an instant-read thermometer. Use a slotted spoon to transfer the chorizo to a plate lined with paper towels to drain excess grease.
  2. Cube the white American cheese and cream cheese into 1-inch pieces. Seed and finely chop the jalapeño. Drain the diced tomatoes with green chiles. Have all ingredients ready to go into the slow cooker.
  3. Place the cubed white American cheese, cream cheese, browned chorizo, diced tomatoes with green chiles, and chopped jalapeño into the slow cooker insert. Do not stir yet.
  4. Cover the slow cooker and cook on LOW for 2 hours, until the cheeses are fully melted and the mixture is bubbling around the edges. Stirring once halfway through helps even melting.
  5. After 2 hours, stir the queso vigorously with a wooden spoon until completely smooth and velvety. It should form a thick, creamy ribbon when the spoon is lifted.
  6. Top the queso with fresh pico de gallo and chopped cilantro right before serving. The fresh toppings add brightness and texture.
  7. Serve the queso warm directly from the slow cooker set to the WARM setting. Provide tortilla chips for dipping.
