Before you start

Before you start, make sure you have a 6-quart slow cooker. Cube the white American cheese and cream cheese while they are cold; they are easier to handle.

Seed and finely chop the jalapeño, and drain the diced tomatoes with green chiles. Brown the chorizo in a skillet over medium-high heat until fully cooked, then drain on paper towels. Have all ingredients measured and ready to go.

Ingredients at a glance (8)
  • 2 lb white American cheese, cubed
  • 8 oz cream cheese, softened and cubed
  • 1 lb fresh Mexican chorizo, browned and drained
  • 1 cup diced tomatoes with green chiles, drained
  • 1 jalapeño, seeded and finely chopped
  • Pico de gallo, for serving
  • Chopped fresh cilantro, for serving
  • Tortilla chips, for serving

Instructions

Phase 1: Prep and Brown

  1. Brown the Chorizo
Heat a large skillet over medium-high heat. Add the fresh Mexican chorizo and cook, breaking it up with a wooden spoon, until browned and cooked through, about 8 minutes. The chorizo should reach 160°F (71°C) on an instant-read thermometer. Use a slotted spoon to transfer the chorizo to a plate lined with paper towels to drain excess grease.
Look for The chorizo is browned, crumbly, and releases red oil.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Draining the chorizo keeps the queso from becoming greasy.
  2. Prep the Ingredients
Cube the white American cheese and cream cheese into 1-inch pieces. Seed and finely chop the jalapeño. Drain the diced tomatoes with green chiles. Have all ingredients ready to go into the slow cooker.
Look for Cheeses are cubed and vegetables are prepped.
Tip Cubing cheese evenly helps it melt smoothly.

The chorizo is browned and crumbly, with a deep red color and a rich, spicy aroma. The cheeses are cubed and the vegetables are prepped. The kitchen smells of toasted spices and garlic. Everything is ready to be layered into the slow cooker.

Phase 2: Slow-Cook and Melt

  1. Layer in the Slow Cooker
Place the cubed white American cheese, cream cheese, browned chorizo, diced tomatoes with green chiles, and chopped jalapeño into the slow cooker insert. Do not stir yet.
Look for All ingredients are in the slow cooker, ready to melt.
Tip Layering the cheeses on the bottom helps prevent scorching.
  2. Slow-Cook on Low
Cover the slow cooker and cook on LOW for 2 hours, until the cheeses are fully melted and the mixture is bubbling around the edges. Stirring once halfway through helps even melting.
Look for The edges are bubbling and the cheese is mostly melted.
Tip Resist lifting the lid too often; it lets heat escape.
  3. Stir Until Velvety
After 2 hours, stir the queso vigorously with a wooden spoon until completely smooth and velvety. It should form a thick, creamy ribbon when the spoon is lifted.
Look for The queso is glossy, smooth, and ribbons off the spoon.
Tip If the queso seems too thick, stir in a splash of milk (not shown in video).

After 2 hours, the cheeses have melted into a smooth, bubbling pool. The edges are gently simmering, and the aroma of melted cheese and chorizo fills the kitchen. The mixture is glossy and thick, with no visible lumps. Stirring reveals a velvety texture that ribbons off the spoon.

Phase 3: Top and Serve

  1. Add Fresh Toppings
Top the queso with fresh pico de gallo and chopped cilantro right before serving. The fresh toppings add brightness and texture.
Look for The queso is topped with colorful pico and green cilantro.
Tip Add toppings just before serving to keep them crisp.
  2. Serve Warm
Serve the queso warm directly from the slow cooker set to the WARM setting. Provide tortilla chips for dipping.
Look for The queso is warm, creamy, and ready to dip.
Tip Keep the slow cooker on WARM to maintain the perfect dipping consistency.

The queso is topped with fresh pico de gallo and cilantro, adding bright red, green, and white colors.

The steam rises from the warm dip, and the smell of fresh tomatoes and herbs mingles with the rich cheese. The consistency is perfectly dippable, coating a chip without dripping too much.

Common mistakes

A common mistake is cooking the queso on high, which can cause the dairy to separate and become grainy. Always use LOW heat. Another issue is not draining the chorizo well, leaving excess grease that makes the queso oily.

Be sure to brown the chorizo thoroughly and drain it on paper towels. Also, don’t skip the stir halfway through; it ensures even melting and prevents sticking.

How to tell it’s done

The queso is done when it is completely melted, smooth, and bubbling around the edges. It should have a velvety, pourable consistency, not thick or clumpy.

If you lift a spoonful, it should ribbon back into the pot. The chorizo should have reached 160°F (71°C) when browned, so the queso is safe to serve. Keep it warm on the WARM setting.

  • Ground meat: 160°F (71°C) in the thickest part
