Before you start

Before you begin assembling this masterpiece, organize all your ingredients and prep the workspace. Cook the lasagna noodles in a large pot of salted water until they are just al dente, then drain them and lay them flat on parchment paper to prevent sticking.

Peel and devein the shrimp, cutting most of them into bite-sized pieces while keeping a few whole for the final garnish. Drain the crab meat thoroughly and gently pick through it to remove any stray shell pieces, keeping the large lumps intact as much as possible.

Ingredients at a glance (7)
  • 2 tbsp butter
  • 1 lb raw shrimp, peeled, deveined, and divided
  • 3 cups creamy white sauce, store-bought or made ahead
  • 12 lasagna noodles, cooked and drained
  • 8 oz crab meat, drained
  • 3 cups shredded cheese, such as mozzarella, divided
  • chopped fresh parsley for serving

Instructions

Seafood Preparation

  1. Sear the Shrimp
Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the shrimp in a single layer and sear until they are pink, opaque, and cooked through, about 2 to 3 minutes per side. Ensure the shrimp reach an internal temperature of 145°F (63°C). Remove from heat, set aside a few whole shrimp for garnish, and chop the remaining shrimp into bite-sized pieces.
Look for The shrimp should be firm, pink, and opaque.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Do not overcrowd the skillet to ensure a beautiful sear.

At the end of this phase, the shrimp should be beautifully pink, opaque, and cooked to safety. The kitchen will be filled with the rich, savory aroma of butter and seared seafood. The shrimp must be firm to the touch and ready to be chopped and layered into the lasagna dish.

Lasagna Assembly and Oven Baking

  1. Assemble the Lasagna Layers
Preheat your oven to 375°F (190°C). Spread a thin layer of the creamy white sauce across the bottom of a 9x13-inch baking dish. Lay three cooked lasagna noodles side-by-side. Top with a portion of the chopped shrimp, crab meat, creamy white sauce, and a generous sprinkle of shredded cheese. Repeat these layers with the remaining noodles, seafood, sauce, and cheese.
Look for The layers should be evenly distributed and flat.
Tip Press down gently on each pasta layer to keep the lasagna compact.
  2. Bake Until Golden and Bubbly
For the final top layer, place the last three lasagna noodles, spread the remaining creamy white sauce over them, and cover completely with the remaining shredded cheese. Place the baking dish in the preheated oven and bake for 25 to 30 minutes until the cheese is blistered, bubbly, and golden-brown on top.
Look for The cheese crust should be blistered and bubbly.
Tip If the top browns too quickly, cover loosely with aluminum foil.

As this phase concludes, the lasagna should be bubbling vigorously around the edges, and the cheese on top should be beautifully blistered and golden brown.

The aroma of baked seafood, melted cheese, and toasted pasta will fill the air. Inserting a knife into the center should meet little resistance, confirming the pasta is tender and the layers are fully heated.

Resting, Garnishing, and Slicing

  1. Garnish, Rest, and Serve
Remove the lasagna from the oven and let it rest on a wire rack for 15 minutes to allow the layers to set. Before slicing, arrange the reserved seared whole shrimp on top and garnish with chopped fresh parsley. Cut into tall, decadent slices and serve warm on ceramic plates.
Look for The lasagna should be firm enough to slice cleanly.
Tip Wipe your knife with a warm, damp cloth between slices for clean cuts.

After resting, the lasagna will have set slightly, making it much easier to slice clean, beautiful portions. The top will be adorned with the seared whole shrimp and a vibrant sprinkle of fresh green parsley. Each slice should hold its tall, decadent shape on the plate, showing off the distinct layers of pasta, seafood, and rich white cream sauce.

Common mistakes

One common mistake is assembling the lasagna while the white sauce or the noodles are still piping hot, which can cause the layers to slide apart and become messy when sliced. Let the sauce cool slightly before assembly.

Another frequent error is overcooking the shrimp during the initial sear; remember they will continue to cook in the oven, so a brief sear just until they turn pink is all that is needed to keep them tender.

How to tell it’s done

To ensure food safety, the internal temperature of the seafood lasagna must reach 145°F (63°C) when checked with a digital food thermometer inserted into the center.

The seafood should be fully cooked, with the shrimp firm and pink and the crab meat hot throughout. Visually, the cheese crust must be completely melted, bubbly, and golden-brown, and the pasta sheets should be tender enough to slide a fork through effortlessly.

  • Shellfish: 145°F (63°C) in the thickest part
