Tips for success

To enhance the flavor profile, consider adding a pinch of red pepper flakes during the browning phase if you prefer a subtle heat. This addition complements the richness of the cream and the acidity of the tomatoes beautifully.

Additionally, ensure you serve the pasta in warmed bowls if possible; this simple step keeps the creamy sauce from thickening too quickly, maintaining that perfect, velvety consistency from the first bite to the last spoonful.

When using fresh basil, add it right at the very end of the plating process. This preserves its vibrant color and delicate, aromatic oils, which are easily lost if exposed to high heat for too long.

Similarly, the torn fresh mozzarella should be added as a final garnish rather than stirred in, as this provides a beautiful contrast in temperature and texture, with the cheese softening slightly but retaining its distinct, creamy character against the hot pasta.

Variations

  • Spicy Sausage Rigatoni: Increase the heat by adding one teaspoon of crushed red pepper flakes to the skillet during the sausage browning phase. For even more spice, use hot Italian sausage instead of the mild variety.
  • Vegetable-Packed Pasta: Sauté one cup of finely diced bell peppers or zucchini alongside the sausage. These vegetables add color, nutrition, and a pleasant crunch that complements the velvety sauce perfectly.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Ensure the pasta is cooled to room temperature within 2 hours before refrigerating.
Freezer
Freezing is not recommended as the creamy, tomato-based sauce may separate and the pasta texture will degrade significantly upon thawing and reheating.
Reheat
Reheat gently in a skillet over low heat, adding a splash of water or broth to loosen the sauce and restore its creamy consistency.

If you have leftovers, allow the pasta to cool for no more than two hours at room temperature before transferring it to an airtight container. Keep the pasta in the refrigerator for up to three days. Note that the sauce will thicken significantly as it cools due to the starch in the pasta and the cheese; this is normal and does not affect the quality of the dish when properly reheated.

While this dish is best enjoyed immediately, you can prepare the sauce base up to a day in advance. Store the sauce in a sealed container in the refrigerator and reheat it gently on the stove before tossing in freshly cooked pasta. It is not recommended to cook the pasta ahead of time, as it will lose its al dente texture. By keeping the components separate until the final assembly, you ensure the best possible quality.

Serving ideas

Serve this rigatoni in wide, shallow bowls to showcase the beautiful texture of the sauce and the rustic appeal of the sausage and pasta. Provide extra grated Parmesan on the side for guests who prefer a more intense cheese flavor.

A simple side of crusty bread is excellent for mopping up any remaining sauce, providing a satisfying crunch that contrasts well with the tender, creamy rigatoni and the soft mozzarella garnish.

The visual presentation is part of the experience, so take a moment to ensure the basil and mozzarella are distributed evenly across the top of each serving.

The contrast between the vibrant green of the basil, the creamy white of the mozzarella, and the rich orange-red of the sauce makes for an inviting and elegant presentation. Serve immediately while the dish is steaming hot to ensure the sauce remains at its most luxurious and silky consistency.

Frequently asked questions

Can this dish be made ahead of time?
It is best served fresh. However, you can prepare the sauce component in advance. Keep the sauce refrigerated and cook the pasta fresh when you are ready to serve, then combine them for the final step.
Why does the sauce split when the cream is added?
Sauce splitting often occurs if the liquid is boiling too vigorously when the cream is added. Always lower the heat to a gentle simmer before incorporating the cream to ensure a smooth, stable emulsion.
What is the purpose of using pasta cooking liquid?
The starchy pasta water is essential for creating a cohesive sauce. The starch acts as a natural emulsifier, helping the fat in the cream and cheese bind with the tomato base, resulting in a glossy, thick sauce.

Ingredients

  • 1 lb ground Italian sausage
  • 1 lb rigatoni pasta
  • 3 tbsp tomato paste
  • 1 cup chicken broth
  • 1/2 cup pasta cooking liquid
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • fresh basil leaves, for serving
  • torn fresh mozzarella, for serving

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground Italian sausage and cook, breaking it up with a wooden spoon, until browned and no longer pink. Ensure the internal temperature reaches at least 160°F (71°C) to guarantee safety. Once cooked through, remove the sausage from the pan and set it aside while you prepare the sauce base.
  2. Bring a large pot of salted water to a rolling boil. Add the rigatoni and cook according to the package instructions until al dente. Before draining the pasta, carefully scoop out and reserve about half a cup of the starchy cooking liquid to help emulsify the sauce later. Drain the remaining pasta in a colander and set aside.
  3. In the same skillet used for the sausage, add the tomato paste. Cook the paste over medium heat for one to two minutes until it darkens slightly and becomes fragrant. Pour in the chicken broth and the reserved pasta cooking liquid, whisking or stirring constantly to deglaze the pan and incorporate any browned bits from the sausage. Allow the mixture to simmer until it slightly thickens.
  4. Lower the heat and pour in the heavy cream, stirring continuously to combine it with the tomato base. Return the browned sausage to the skillet and add the cooked rigatoni. Toss everything together until the pasta is thoroughly coated in the velvety sauce. Finally, stir in the grated Parmesan cheese until melted and smooth. Serve immediately in warm bowls, topped with torn fresh mozzarella and fresh basil leaves.
