Tips for success
For the best texture, don't over-mash the vegetables — leaving a few small chunks adds rustic appeal. If the sauce seems too thick when tossing, add a splash of pasta water to loosen it.
If it's too thin, let it simmer for a minute or two to reduce. Taste and adjust the seasoning with salt and pepper just before serving, as the cheese and pasta water both add salt.
To get a perfect twirl, use pasta tongs and lift a small bundle of spaghetti from the center of the skillet, then twist the tongs as you lift.
Place the twirl in the center of the plate and gently pull the tongs away. Garnish with a basil leaf and a crack of black pepper for a restaurant-style finish.
Variations
- Spicy Eggplant Spaghetti: Add 1/2 teaspoon of red pepper flakes along with the paprika for a gentle heat. You can also stir in a chopped fresh chili with the garlic for extra kick.
- Herb-Infused Version: Swap the basil for a mix of fresh oregano and thyme, adding them with the cream. Garnish with extra herbs and a squeeze of lemon juice for brightness.
- Vegan Adaption: Replace the heavy cream with full-fat coconut milk and use a vegan mozzarella-style shreds. Omit the cheese or use a nutritional yeast-based sauce for a dairy-free version.
- Protein-Packed Addition: Stir in cooked, shredded chicken or sautéed shrimp along with the spaghetti. This turns the dish into a heartier main course without changing the sauce.

Serving ideas
Serve the creamy roasted eggplant spaghetti immediately after tossing, while the sauce is hot and silky. Twirl each portion onto a plate or into a shallow bowl, and garnish with fresh basil leaves and a sprinkle of black pepper. A small drizzle of olive oil over the top adds richness and sheen.
This pasta pairs well with a simple green salad and crusty bread to soak up any extra sauce. For a heartier meal, serve alongside grilled chicken or shrimp, though the pasta is satisfying enough to stand alone.
A glass of light red wine, such as a Chianti or Pinot Noir, complements the creamy tomato sauce nicely.

Creamy Roasted Eggplant Spaghetti in 30 Minutes

Ingredients
- 1 whole eggplant (about 1 lb)
- 1 large ripe tomato
- 3 cloves garlic, peeled
- 1/4 cup olive oil
- 1 tbsp tomato paste
- 1/2 cup heavy cream
- 1 cup shredded kaşar cheese
- Salt to taste
- Black pepper to taste
- 1 tsp paprika
- 1/4 cup fresh basil leaves, chopped
- 8 oz spaghetti
- 1/2 cup pasta cooking water
Instructions
- Place the whole eggplant, whole tomato, and peeled garlic cloves in a large skillet. Add the olive oil and 1/4 cup water. Cover and cook over low heat for 15 minutes, turning once, until the eggplant is very tender and collapsed.
- Remove the vegetables from the skillet. When cool enough to handle, peel the skins from the eggplant and tomato. Return the flesh to the skillet. Mash everything with a fork until mostly smooth but with a few chunky bits.
- Stir the tomato paste into the mashed vegetables. Cook over medium heat for 2 minutes, stirring constantly, until the paste darkens and the mixture smells rich.
- Pour in the heavy cream and add the shredded kaşar cheese. Season with salt, black pepper, and paprika. Stir until the cheese melts and the sauce is smooth and orange.
- Bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the spaghetti.
- Add the drained spaghetti to the skillet with the sauce. Pour in the reserved pasta water and toss with pasta tongs until every strand is coated and the sauce is glossy.
- Stir in the chopped fresh basil leaves. Remove the skillet from the heat.
- Use pasta tongs to twirl a portion of the spaghetti onto each plate. Garnish with a few extra basil leaves if desired. Serve immediately while hot and creamy.
