Tips for success
To achieve the ultimate cheese pull, serve these enchiladas immediately after baking while the melted Monterey Jack is still hot and stretchy.
Letting the dish sit for too long will cause the cheese to firm up, losing that dramatic, gooey texture. If you need to transport the dish, cover it tightly with foil to trap the steam and keep the cheese soft.
For an extra layer of flavor, try warming the tortillas individually on a dry skillet for a few seconds before rolling. This light charring adds a subtle toasted note that complements the creamy queso.
It also makes the tortillas significantly more pliable, reducing the risk of tearing as you roll them tightly around the rich chicken filling.
Variations
- Spicy Jalapeno Queso Enchiladas: Stir diced pickled jalapenos into the chicken filling and use a spicy pepper jack cheese on top for an extra kick of heat.
- Black Bean and Corn Queso Enchiladas: Mix rinsed black beans and sweet corn kernels into the creamy chicken filling to add texture, color, and flavor.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze assembled, unbaked enchiladas tightly wrapped for up to 2 months. Thaw overnight in the fridge before baking.
- Reheat
- Reheat covered with foil in a 350°F (175°C) oven for 15-20 minutes, or microwave individual portions until hot.
Store any leftovers in an airtight container in the refrigerator for up to three days. Be sure to let the dish cool to room temperature for no more than two hours before refrigerating to maintain food safety.
To reheat, place individual portions in the microwave or cover the baking dish with foil and bake at 350°F (175°C) until heated through.
You can assemble these enchiladas up to a day in advance. Roll the chicken mixture into the tortillas, place them in the baking dish, and cover them tightly with plastic wrap before storing in the refrigerator.
Wait to pour the queso sauce and add the shredded cheese until right before you are ready to bake to prevent the tortillas from becoming soggy.
Serving ideas
Present these enchiladas on a large platter with the bright red tomatoes and fresh green cilantro scattered generously over the golden cheese. The contrast of colors makes the dish visually stunning and highly appetizing. Serve them alongside classic sides like Mexican rice, refried beans, or a crisp green salad to round out the meal.
For an extra touch of indulgence, offer additional toppings on the side so guests can customize their plates. Sliced jalapeños, a squeeze of fresh lime juice, or a dollop of cool guacamole pair beautifully with the rich, cheesy flavors of the queso. The acidity from these toppings helps balance the creaminess of the dish.

Creamy Queso Chicken Enchiladas with Melty Cheese

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 4 oz cream cheese, softened
- 8 flour tortillas
- 1 1/2 cups queso sauce, store-bought or made ahead
- 1 1/2 cups shredded Monterey Jack cheese
- 1/2 cup diced red tomatoes, for serving
- 2 tbsp minced cilantro, for serving
Instructions
- Place the chicken breasts in a pot and cover them with water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 10 to 12 minutes, or until the chicken is fully cooked through and registers an internal temperature of 165°F (74°C) on a meat thermometer.
- Transfer the cooked chicken to a cutting board and shred it finely using two forks. In a large mixing bowl, combine the warm shredded chicken and the softened cream cheese, stirring thoroughly until the mixture is completely combined, smooth, and creamy.
- Preheat the oven to 375°F (190°C). Lay the flour tortillas flat on a clean work surface, spoon an equal amount of the creamy chicken filling down the center of each tortilla, and roll them up tightly into neat cylinders.
- Spread a thin layer of the queso sauce over the bottom of a 9x13-inch baking dish. Arrange the rolled tortillas seam-side down in the dish, then pour the remaining queso sauce evenly over the top, covering the tortillas completely.
- Sprinkle the shredded Monterey Jack cheese evenly over the sauced tortillas. Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the cheese is melted and bubbling golden-brown around the edges.
- Remove the baking dish from the oven and let it cool slightly for 5 minutes. Garnish the hot, steaming enchiladas with the diced red tomatoes and minced cilantro just before serving.
