Before you start

Before starting the cooking process, ensure all ingredients are measured and ready. Soften the cream cheese at room temperature for at least thirty minutes so it blends smoothly with the chicken.

Dice the fresh tomatoes and mince the cilantro, keeping them in small bowls for the final garnish. Lightly grease your baking dish and preheat your oven so it is ready to receive the assembled enchiladas immediately after rolling.

Ingredients at a glance (7)
  • 1 1/2 lb boneless skinless chicken breasts
  • 4 oz cream cheese, softened
  • 8 flour tortillas
  • 1 1/2 cups queso sauce, store-bought or made ahead
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/2 cup diced red tomatoes, for serving
  • 2 tbsp minced cilantro, for serving

Instructions

Preparing the Creamy Chicken Filling

  1. Poach the Chicken
Place the chicken breasts in a pot and cover them with water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 10 to 12 minutes, or until the chicken is fully cooked through and registers an internal temperature of 165°F (74°C) on a meat thermometer.
Look for The chicken is cooked when it is opaque throughout and no longer pink in the middle.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Let the chicken rest for 5 minutes before shredding to keep the juices locked inside.
  2. Shred and Mix the Filling
Transfer the cooked chicken to a cutting board and shred it finely using two forks. In a large mixing bowl, combine the warm shredded chicken and the softened cream cheese, stirring thoroughly until the mixture is completely combined, smooth, and creamy.
Look for The mixture should be cohesive, creamy, and uniform throughout.
Tip Using room-temperature cream cheese prevents lumps in the filling.

At the end of this phase, the shredded chicken should be completely coated in the warm cream cheese. The filling must look cohesive, thick, and highly fragrant, with no dry pockets of chicken or solid lumps of cream cheese remaining in the bowl.

Rolling and Assembling the Enchiladas

  1. Roll the Tortillas
Preheat the oven to 375°F (190°C). Lay the flour tortillas flat on a clean work surface, spoon an equal amount of the creamy chicken filling down the center of each tortilla, and roll them up tightly into neat cylinders.
Look for The tortillas should be rolled tightly enough to hold the filling without tearing.
Tip Warm the tortillas in the microwave for 15 seconds to make them more pliable.
  2. Assemble in Baking Dish
Spread a thin layer of the queso sauce over the bottom of a 9x13-inch baking dish. Arrange the rolled tortillas seam-side down in the dish, then pour the remaining queso sauce evenly over the top, covering the tortillas completely.
Look for The tortillas should be completely bathed in the rich queso sauce.
Tip Placing the rolls seam-side down prevents them from unrolling during baking.

The baking dish should now contain eight tightly rolled tortillas resting seam-side down in a neat row. They must be completely submerged under a smooth, even layer of the creamy queso sauce, with no dry tortilla edges exposed to the air.

Baking and Garnishing to Perfection

  1. Bake with Cheese
Sprinkle the shredded Monterey Jack cheese evenly over the sauced tortillas. Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the cheese is melted and bubbling golden-brown around the edges.
Look for Look for a bubbly, lightly browned cheese blanket across the top.
Tip Broil for the last 2 minutes if you prefer a deeper golden color on the cheese.
  2. Garnish and Serve
Remove the baking dish from the oven and let it cool slightly for 5 minutes. Garnish the hot, steaming enchiladas with the diced red tomatoes and minced cilantro just before serving.
Look for The fresh toppings should look bright against the melted cheese.
Tip Serve immediately while the cheese pull is at its peak.

The enchiladas are ready when the cheese on top is fully melted, bubbling vigorously around the edges, and showing beautiful golden-brown spots.

The fresh diced tomatoes and minced cilantro should be scattered evenly over the hot, steaming surface right before serving.

Common mistakes

One common mistake is overfilling the tortillas, which causes them to burst or unroll during the baking process. Keep the filling to a moderate strip down the center of each tortilla.

Another error is leaving the tortilla edges dry; make sure the queso sauce covers them entirely so they do not dry out and become hard and crunchy in the oven.

How to tell it’s done

The chicken filling is safe and fully cooked when it initially reaches an internal temperature of 165°F (74°C) before assembly.

Once baked, the entire dish is done when the cheese is completely melted, the sauce is bubbling hot throughout, and the center of the dish is steaming, which typically takes about twenty to twenty-five minutes.

  • Poultry: 165°F (74°C) in the thickest part
