Tips for success
For the best flavor, use a good-quality condensed cream of broccoli soup and freshly grated Parmesan.
The soup adds a subtle vegetable flavor that complements the cauliflower, while the Parmesan brings a salty, nutty note. If you want a thicker sauce, stir in a slurry of cornstarch and water at the end.
This recipe is endlessly adaptable. You can add a pinch of garlic powder or a dash of hot sauce for extra kick.
For a lower-carb option, skip the noodles and serve the chicken and cauliflower as is, or over steamed rice. The leftovers are just as delicious, so don't be afraid to make a double batch.
Variations
- Add Bacon: For a smoky twist, cook 4 slices of bacon until crisp, then crumble and stir into the finished dish just before serving. The salty crunch pairs beautifully with the creamy sauce.
- Spice It Up: Add a teaspoon of hot sauce or a pinch of red pepper flakes along with the soup for a gentle heat. You can also top with sliced jalapeños for extra kick.
- Vegetable Swap: Replace half of the cauliflower with broccoli florets or sliced carrots for a different vegetable medley. Adjust the cooking time slightly if using denser vegetables.
- Herb Infusion: Stir in a teaspoon of dried thyme or rosemary with the soup for an herby aroma. Fresh herbs like parsley or chives can be sprinkled on top before serving.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stove or in the microwave, adding a little broth or milk if needed.
- Freezer
- This dish freezes well for up to 3 months. Cool completely, then transfer to a freezer-safe container. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Add a splash of chicken broth or milk if the sauce is too thick.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools, so you may want to add a splash of milk or chicken broth when reheating to loosen it up.
You can prep the ingredients the night before: cut the cauliflower, measure the soup and cheese, and store them in separate containers.
In the morning, simply layer everything in the slow cooker and set it to cook. This makes the recipe even more convenient for busy days.
Serving ideas
Serve this creamy chicken and cauliflower over a generous portion of buttered egg noodles, allowing the sauce to soak into every twist.
A simple green salad with a tangy vinaigrette makes a bright contrast to the rich, creamy main dish.
For a heartier meal, pair it with crusty bread to mop up the extra sauce. You can also sprinkle with fresh chopped parsley or chives for a pop of color. This dish is satisfying on its own, but the noodles truly complete it.

Creamy Parmesan Cauliflower Chicken Crockpot Dinner

Ingredients
- 3 lb boneless skinless chicken breasts
- 1 head cauliflower, cut into florets
- 1 can (10.5 oz) condensed cream of broccoli soup
- 8 oz cream cheese, softened
- 1/2 cup freshly grated Parmigiano-Reggiano
- 12 oz buttered twisted egg noodles, for serving
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the cauliflower florets around and over the chicken. Spoon the condensed cream of broccoli soup over the top, spreading it slightly to cover the chicken and cauliflower.
- Place the softened cream cheese in the center of the slow cooker. Sprinkle the grated Parmigiano-Reggiano over the top, covering the cream cheese and the soup layer.
- Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The cauliflower should be tender when pierced with a fork.
- Once the chicken is cooked, use two forks to shred the breasts directly in the slow cooker. Stir the shredded chicken into the sauce, making sure it is well coated. The cauliflower will break apart slightly, thickening the sauce.
- Spoon the creamy chicken and cauliflower mixture over warm buttered egg noodles. Serve immediately, with extra Parmesan on top if desired.
