Before you start
Before you start, make sure the cream cheese is softened to room temperature so it melts smoothly. Cut the cauliflower into uniform florets, about 1 to 2 inches across.
Have your slow cooker ready and all the ingredients measured. The egg noodles can be cooked just before serving, or you can prepare them ahead and toss with butter to keep them from sticking.
Ingredients at a glance (6)
- 3 lb boneless skinless chicken breasts
- 1 head cauliflower, cut into florets
- 1 can (10.5 oz) condensed cream of broccoli soup
- 8 oz cream cheese, softened
- 1/2 cup freshly grated Parmigiano-Reggiano
- 12 oz buttered twisted egg noodles, for serving
Instructions
Layer and Top
- Layer the IngredientsPlace the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the cauliflower florets around and over the chicken. Spoon the condensed cream of broccoli soup over the top, spreading it slightly to cover the chicken and cauliflower.Look for The chicken and cauliflower should be evenly coated with the soup.Tip No need to stir—the slow cooker will blend everything as it cooks.
- Add the CheesesPlace the softened cream cheese in the center of the slow cooker. Sprinkle the grated Parmigiano-Reggiano over the top, covering the cream cheese and the soup layer.Look for The top should look creamy and cheesy.Tip Soften the cream cheese beforehand so it melts more evenly.
The slow cooker should be filled with the chicken, cauliflower, soup, and cheeses. The top looks creamy and speckled with green from the soup. Everything is ready to cook, and you can already imagine the aroma that will fill the kitchen.
Cook and Shred
- Cook Low and SlowCover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The cauliflower should be tender when pierced with a fork.Look for The sauce will be bubbling gently around the edges.Safe temperature 165°F (74°C) internal temperature (poultry)Tip Avoid lifting the lid during cooking to keep the heat steady.
- Shred the ChickenOnce the chicken is cooked, use two forks to shred the breasts directly in the slow cooker. Stir the shredded chicken into the sauce, making sure it is well coated. The cauliflower will break apart slightly, thickening the sauce.Look for The chicken shreds easily and the sauce is creamy.Tip If the sauce seems thin, let it cook uncovered for 10 minutes to thicken.
After a few hours, the slow cooker is bubbling gently, and the smell of broccoli and cheese is irresistible.
The chicken is fork-tender, and the cauliflower is soft but still holds its shape. The sauce is creamy and thick enough to coat a spoon.
Serve and Enjoy
- Serve Over NoodlesSpoon the creamy chicken and cauliflower mixture over warm buttered egg noodles. Serve immediately, with extra Parmesan on top if desired.Look for The noodles are coated with the creamy sauce.Tip Twist the noodles into a nest for a pretty presentation.
The creamy chicken and cauliflower are spooned over a bed of buttered egg noodles, with the sauce pooling around the edges. Each bite is rich, savory, and satisfying. The dish is ready to be served to hungry family or guests.
Common mistakes
One common mistake is lifting the lid too often during cooking, which lets out heat and extends the cooking time. Another is using pre-shredded Parmesan, which may not melt as smoothly.
Overcooking the chicken can make it dry, so check the temperature at the minimum recommended time. If the sauce splits, it may be because the cream cheese was not softened—always bring it to room temperature first.
How to tell it’s done
The dish is done when the chicken reaches an internal temperature of 165°F (74°C) and the cauliflower is tender when pierced with a fork.
The sauce should be bubbling and thickened, with the cream cheese fully melted and incorporated. If the sauce seems too thin, remove the lid and let it cook on HIGH for another 15 to 20 minutes to reduce.
- Poultry: 165°F (74°C) in the thickest part
