Before you start

Before starting, have all the ingredients measured and ready. Shred the cooked chicken if not already done. Dice the fresh mango into small, even cubes.

Soften the cream cheese by leaving it at room temperature for about 30 minutes. Set out the Crockpot and the measuring cups. No need to preheat or grease the slow cooker.

Ingredients at a glance (7)
  • 3 cups shredded cooked chicken
  • 16 oz cream cheese, softened
  • 2 cups shredded Pepper Jack cheese
  • 3/4 cup mango habanero wing glaze
  • 1 cup diced fresh mango
  • 1/2 cup ranch dressing
  • Lime tortilla chips, for serving

Instructions

Layer and Melt

  1. Layer the ingredients
Place the shredded cooked chicken in the bottom of the Crockpot. Add the cream cheese in pieces, then sprinkle the shredded Pepper Jack over the top. Pour the mango habanero wing glaze evenly over the cheese. Add the diced fresh mango and drizzle with the ranch dressing. Do not stir yet — layering helps the cream cheese soften evenly.
Look for The ingredients sit in distinct layers, with the glaze and ranch on top.
Tip Soften the cream cheese slightly for faster melting, but cold cream cheese also works.
  2. Cover and set to low
Cover the Crockpot with its lid and set the heat to LOW. Let the dip cook for 2 hours. After the first hour, stir gently to combine the melted cream cheese and the other ingredients. Continue cooking until the mixture is hot and bubbly.
Look for The cream cheese softens and the edges begin to bubble.
Tip Resist lifting the lid too often — each peek adds cooking time.

After the first hour, the cream cheese will be soft and starting to melt at the edges. The glaze will be warm and fragrant. The chicken remains layered, but the cheese is beginning to slump. Give it a gentle stir to help the melting along, then continue cooking.

Stir to Velvet

  1. Stir into velvet
After 2 hours, stir the dip thoroughly until the cream cheese is fully incorporated and the sauce is smooth and velvety. The chicken should be coated, and the mango pieces should be soft but intact. If the dip seems too thick, stir in a splash of milk or chicken broth.
Look for The dip is glossy, creamy, and slightly thickened.
Tip Use a spatula to scrape the sides and bottom for even melting.
  2. Check the temperature
Insert an instant-read thermometer into the center of the dip. The chicken is fully cooked and safe to eat when the mixture reaches at least 165°F (74°C). If it hasn't reached that temperature, continue cooking on LOW for another 15 minutes and check again.
Look for The thermometer reads 165°F (74°C) or higher.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Stir before measuring to get an accurate reading.

After 2 hours, the dip should be bubbling around the edges and the cream cheese fully melted. The mixture will look glossy and smooth.

Stir thoroughly until the color is uniform and the chicken and mango are evenly distributed. The dip should be thick and creamy, not watery.

Serve and Savor

  1. Serve warm
Keep the Crockpot on the WARM setting or LOW while serving. Scoop the dip into bowls or serve directly from the Crockpot. Provide lime tortilla chips for dipping.
Look for The dip stays warm and fluid, perfect for scooping.
Tip Set out small plates and napkins — this dip is rich and messy in the best way.

The dip is ready to serve. It should be hot, with a slight sheen from the melted cheese. The aroma is sweet and spicy. Scoop a chip through and watch the cheese pull. Keep the slow cooker on WARM to maintain the perfect consistency throughout your event.

Common mistakes

One common mistake is cooking on high, which can cause the dairy to curdle or separate. Always use LOW for the full 2 hours. Another is over-stirring too early; let the cream cheese melt before mixing.

Avoid adding extra liquid unless needed, as the dip should be thick. Finally, don't let the dip sit without stirring after it's done — it can form a skin on top.

How to tell it’s done

The dip is done when it's hot, bubbly, and fully melted. The cream cheese should be completely incorporated, leaving no white lumps. The mixture should be thick enough to coat a spoon but still scoopable.

If using an instant-read thermometer, the center should read at least 165°F (74°C) to ensure the chicken is safely reheated. Keep it on WARM while serving.

  • Poultry: 165°F (74°C) in the thickest part
