Tips for success
For the best sear, make sure the chicken is dry before seasoning. Moisture on the surface steams instead of browning. Use a heavy-bottomed skillet like cast iron or stainless steel, and let the oil get hot before adding the chicken.
Resist the urge to stir too often—letting the cubes sit for a couple of minutes creates that deep golden crust that adds flavor to the whole dish.
When making the sauce, add the parmesan gradually and keep the heat low. If the sauce seems too thick, loosen it with a splash of the reserved pasta water. Toss the pasta thoroughly so the sauce coats every strand.
Freshly grated parmesan melts more smoothly than pre-shredded, and it makes a noticeable difference in texture. Taste before serving and adjust salt and pepper—the parmesan adds saltiness, so you may need less salt than you think.
Variations
- Mushroom Chicken Pasta: Add sliced mushrooms to the skillet with the garlic and sauté until golden before adding the cream. The earthy flavor complements the parmesan beautifully.
- Spicy Arrabbiata Twist: Stir in 1/2 tsp red pepper flakes with the garlic for a gentle heat. Top with extra parsley and a squeeze of lemon to brighten the dish.
- Sun-Dried Tomato Pasta: Add 1/4 cup chopped sun-dried tomatoes to the sauce along with the parmesan. Their sweet-tart flavor adds depth and color.
- Broccoli Chicken Pasta: Steam 2 cups of broccoli florets and toss them in with the chicken at the end. The bright green adds freshness and makes it a one-bowl meal.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of milk or broth to bring back the creamy texture.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator and reheat gently, adding liquid as needed.
- Reheat
- Reheat in a skillet over medium-low heat with a splash of milk or chicken broth, stirring until hot.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; add a splash of milk or chicken broth when reheating to restore the creamy consistency. Reheat gently on the stovetop over low heat, stirring frequently, or in the microwave in 30-second bursts.
This dish is best made fresh, but the components can be prepped ahead. Cut and season the chicken, mince the garlic, and grate the parmesan up to a day in advance.
Keep them refrigerated separately. Cook the pasta just before serving for the best texture. The sauce is quick to make, so waiting until dinner time ensures the creamiest result.
Serving ideas
Serve the pasta hot, straight from the skillet, with extra grated parmesan and a sprinkle of fresh parsley.
A side salad with a simple vinaigrette balances the richness, and crusty bread is perfect for sopping up any extra sauce. This is a complete meal on its own, but it also pairs well with roasted vegetables or a green salad.
For a more indulgent presentation, top each bowl with a few extra cracks of black pepper and a drizzle of olive oil. The glossy sauce and golden chicken make it a visually appealing dish that feels special enough for company. Leftovers can be packed for lunch—just reheat gently and enjoy.

Creamy Garlic Parmesan Chicken Pasta in 15 Minutes

Ingredients
- 1 lb chicken breast, cut into cubes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12 oz fettuccine pasta
- 1 1/2 cups heavy cream
- 1 cup grated parmesan cheese
- 4 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Season the chicken cubes with garlic powder, paprika, salt, and black pepper. Add the chicken to the skillet in a single layer and cook without stirring for 2–3 minutes until golden brown on one side. Flip the pieces and continue cooking until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), about 4–5 minutes total. Transfer the chicken to a plate and set aside.
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining. Drain the pasta and set aside.
- In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer. Cook for 2–3 minutes, stirring occasionally, until the cream begins to thicken slightly. Reduce the heat to low and gradually whisk in the grated parmesan cheese until the sauce is smooth and creamy.
- Add the drained fettuccine to the skillet with the cream sauce. Toss gently with tongs or a wooden spoon until the pasta is fully coated in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach the desired consistency.
- Return the seared chicken to the skillet and toss everything together so the chicken is evenly distributed and warmed through. Cook for 1–2 minutes over low heat until the chicken is hot.
- Sprinkle the chopped fresh parsley over the pasta. Add a few cracks of fresh black pepper if desired. Serve immediately, with extra grated parmesan on the side.
