Tips for success
To enhance the garlic flavor, make sure to mince it very finely so it distributes evenly throughout the sauce. This allows the garlic to release its natural oils into the melting butter, creating a highly aromatic base for the heavy cream.
If you find your cream sauce is too thick after tossing in the pasta, do not panic. The starch-rich pasta water you reserved earlier is a magical ingredient. Add it just a splash at a time while tossing over low heat. The starch helps loosen the sauce while maintaining its emulsified, velvety texture, preventing it from breaking into a greasy mess as plain tap water would.
Variations
- Lemon Herb Chicken Linguine: Stir in one tablespoon of fresh lemon zest and a squeeze of lemon juice at the very end to brighten up the rich cream sauce.
- Mushroom and Spinach Pasta: Sauté sliced cremini mushrooms along with the garlic to add an earthy, savory depth that pairs wonderfully with the parmesan cream.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days, ensuring it cools within 2 hours of cooking.
- Freezer
- Freezing is not recommended, as the heavy cream sauce will separate and become grainy upon thawing.
- Reheat
- Reheat gently on the stovetop over low heat, adding a splash of milk or cream and stirring constantly to restore the smooth emulsion.
Allow any leftover pasta to cool completely at room temperature for no more than two hours before storing. Transfer the leftovers to an airtight container and place them in the refrigerator.
Because this is a cream-based sauce, it is best enjoyed within three days. Note that the pasta will continue to absorb the sauce as it sits, so the leftovers may appear drier when you retrieve them from the fridge.
While pasta is always best served fresh, you can prepare several components ahead of time to save minutes on busy nights. The chicken can be cubed and stored in the refrigerator up to twenty-four hours in advance.
You can also grate the parmesan cheese and store it in an airtight container. However, do not cook the pasta or assemble the cream sauce ahead of time, as the sauce will lose its emulsion and the noodles will become mushy upon reheating.
Serving ideas
Serve this luxurious pasta in shallow, warmed bowls to keep the cream sauce hot for as long as possible. Use a large carving fork or tongs to twirl the linguine into elegant nests in the center of each plate, then spoon the chicken cubes, wilted spinach, and extra sauce over the top.
Garnish each portion with an extra sprinkle of freshly grated parmesan cheese and a pinch of red pepper flakes for visual contrast.
To complete the meal, pair the rich pasta with a crisp, green side salad dressed in a light vinaigrette to cut through the creaminess. A side of crusty garlic bread or a warm baguette is also perfect for scooping up any remaining sauce left on the plate.
For beverages, a chilled glass of dry white wine like Pinot Grigio or Sauvignon Blanc complements the garlic and parmesan beautifully.

Creamy Garlic Parmesan Chicken Linguine with Spinach

Ingredients
- 1 lb boneless skinless chicken breasts, cut into cubes
- 12 oz linguine pasta
- 2 tbsp unsalted butter, divided
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 cups fresh baby spinach
- 1/2 tsp red pepper flakes
Instructions
- Bring a large pot of water to a boil. Add the linguine pasta and cook according to the package instructions until al dente. Reserve one cup of the pasta cooking water, then drain the pasta and set it aside. Do not rinse the cooked pasta.
- Melt one tablespoon of unsalted butter in a large deep skillet over medium-high heat. Add the cubed chicken breasts and cook, stirring occasionally, until they are golden brown on all sides and reach a safe internal temperature of 165°F (74°C), about 6 to 8 minutes. Remove the chicken from the skillet and set aside on a clean plate. Keep the chicken covered to retain warmth.
- Reduce the heat to medium and melt the remaining tablespoon of unsalted butter in the same skillet. Add the minced garlic and sauté, stirring constantly, for about 1 minute until it is highly fragrant and sizzling. Be careful not to let the garlic brown or burn, as this will introduce a bitter flavor to the delicate cream sauce.
- Pour the heavy cream into the skillet, stirring to scrape up the flavorful browned bits from the bottom of the pan. Bring the cream to a gentle simmer. Reduce the heat to low and gradually whisk in the grated parmesan cheese. Continue to whisk constantly until the cheese is completely melted and the sauce becomes smooth and slightly thickened.
- Add the cooked chicken cubes back into the skillet along with the fresh baby spinach. Cook over low heat, stirring gently, for 2 minutes until the spinach is fully wilted and the chicken is heated through.
- Add the drained linguine pasta and red pepper flakes to the skillet. Toss everything together using tongs until the pasta is thoroughly coated in the rich, creamy sauce. If the sauce is too thick, stir in a splash of the reserved pasta cooking water to reach your desired consistency. Serve immediately.
