Tips for success
To take this skillet dish to the next level, consider deglazing the pan with a splash of dry white wine, such as Pinot Grigio or Sauvignon Blanc, right after sautéing the garlic and before adding the heavy cream.
Let the wine reduce by half to cook off the alcohol, leaving behind a bright, acidic complexity that cuts through the richness of the cream. If you prefer to cook without alcohol, a small squeeze of fresh lemon juice added at the very end of cooking provides a similar vibrant lift.
Another excellent tip is to ensure your heavy cream is at room temperature before adding it to the hot skillet. Cold cream straight from the refrigerator can sometimes shock the pan, causing the sauce to cook unevenly or separate.
Additionally, when reheating leftovers, add a splash of chicken broth or water to loosen the sauce, as the cream will naturally thicken and solidify significantly as it cools in the refrigerator.
Variations
- Spinach Addition: Stir in two cups of fresh baby spinach during the final two minutes of simmering until wilted.
- Parmesan Twist: Whisk a quarter cup of freshly grated Parmesan cheese into the heavy cream for an extra savory kick.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freezing is not recommended as the heavy cream sauce will separate and become grainy.
- Reheat
- Reheat gently in a skillet over low heat, adding a splash of broth or water to loosen the cream sauce.
Allow any leftovers to cool completely at room temperature for no more than two hours before transferring them to an airtight container. Store the container in the refrigerator for up to three to four days. Because this recipe contains a high volume of dairy, it is not recommended for long-term freezing, as the cream sauce will likely separate and become grainy upon thawing.
While this dish is best enjoyed fresh from the skillet when the sauce is at its creamiest, you can prepare components ahead of time to save minutes on busy nights.
Cut the chicken, slice the mushrooms, and mince the garlic a day in advance, storing them in separate airtight containers in the refrigerator. When ready to eat, the entire meal can be cooked in under twenty minutes.
Serving ideas
This creamy garlic mushroom chicken skillet is incredibly versatile and pairs beautifully with a variety of side dishes. Serve it over a bed of hot, buttered egg noodles, fettuccine, or penne pasta to catch every drop of the luxurious cream sauce.
It is also spectacular alongside fluffy white rice, garlic mashed potatoes, or creamy polenta, which absorb the savory flavors wonderfully.
For a lighter option, serve the skillet over a bed of zucchini noodles, cauliflower mash, or roasted spaghetti squash. Accompany the meal with a crisp green side salad tossed in a light vinaigrette, or a side of steamed green beans or roasted asparagus. The bright green veggies provide a beautiful color contrast and a refreshing crunch that balances the rich, savory skillet.

Creamy Garlic Mushroom Chicken Skillet

Ingredients
- 1 1/2 lb boneless skinless chicken breasts, cut into bite-sized cubes
- 2 tbsp butter
- 8 oz cremini mushrooms, sliced
- 4 garlic cloves, minced
- 1 cup heavy cream
- 2 tbsp fresh parsley, finely chopped
Instructions
- Melt the butter in a large cast-iron skillet over medium-high heat. Add the cubed chicken pieces in a single layer. Cook undisturbed for 3 to 4 minutes to develop a golden crust, then toss and sear for another 2 to 3 minutes until browned on all sides. Remove the chicken from the skillet and set aside on a plate.
- In the same skillet with the remaining pan drippings, add the sliced mushrooms. Cook over medium heat, stirring occasionally, for 5 to 6 minutes until they release their moisture and turn a deep golden brown. The mushrooms will naturally scrape up the browned bits from the bottom of the pan.
- Add the minced garlic to the skillet with the mushrooms. Sauté for about 1 minute, stirring constantly to prevent the garlic from burning. Cook just until the garlic is highly fragrant and softened.
- Pour the heavy cream into the skillet, stirring to combine with the mushrooms and garlic. Return the seared chicken and any accumulated juices to the pan. Bring the sauce to a gentle simmer over medium-low heat. Cook for 5 to 7 minutes until the sauce thickens and the chicken is fully cooked through to an internal temperature of 165°F (74°C). Garnish with chopped fresh parsley before serving.
