Tips for success

For the best results, use a heavy-bottomed cast iron skillet. It provides the most consistent heat distribution and is the most reliable tool for achieving the perfect sear required for this recipe.

If a cast iron skillet is not available, a heavy stainless steel pan is the next best alternative to ensure the crust develops properly.

When adding the garlic, do not let it brown too much, as burnt garlic turns bitter and can ruin the delicate balance of the cream sauce. Add the cream immediately once the garlic is fragrant.

This stops the cooking process of the garlic and begins the emulsification of the sauce, resulting in a smooth, professional-grade finish.

Variations

  • Mushroom Garlic Steak: Add 1 cup of sliced cremini mushrooms to the skillet after searing the steak. Sauté them in the butter until golden brown before adding the garlic and cream. This adds an earthy depth that pairs wonderfully with the beef.
  • Spicy Garlic Butter: Add 1/2 teaspoon of crushed red pepper flakes to the butter along with the garlic. This provides a subtle, warm heat that cuts through the richness of the heavy cream and complements the savory flavors of the seared steak.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Ensure leftovers are cooled to room temperature within 2 hours before placing them in the refrigerator.
Reheat
Reheat gently in a skillet over low heat or in a microwave-safe dish until just warmed through. Do not overheat, or the steak will become tough.

If there are leftovers, store the sliced steak and the sauce in an airtight container in the refrigerator for up to 3 days. It is best to keep the sauce in a separate container if possible to prevent the steak from becoming overly saturated, although keeping them together is acceptable for a quick meal later.

The sauce can be prepared up to 24 hours in advance and stored in the refrigerator. When ready to serve, gently reheat the sauce in a small saucepan over low heat, adding a splash of cream if it has thickened too much during storage. The steak is best cooked fresh immediately before serving for the optimal texture.

Serving ideas

This dish pairs beautifully with classic steakhouse sides such as roasted baby potatoes or steamed asparagus.

The starch from the potatoes helps soak up the extra garlic butter sauce, while the crisp-tender texture of the asparagus provides a fresh contrast to the rich, creamy elements of the main course. Consider adding a side salad with a bright vinaigrette for balance.

To elevate the presentation, serve the steak on pre-warmed plates. This keeps the sauce at the perfect temperature and prevents the beef fat from solidifying.

Arrange the sliced steak in an overlapping pattern to show off the perfect interior color, then drizzle the sauce over the meat right before the plates are taken to the dining table.

Frequently asked questions

Can this steak be cooked in a non-stick pan?
A non-stick pan is not recommended for this recipe. A cast iron or stainless steel skillet is necessary to achieve the high heat required for a proper sear, which a non-stick surface cannot handle safely or effectively.
Why did the cream sauce split?
The sauce usually splits if the heat is too high or if it is boiled too rapidly. Keep the heat at a gentle simmer and stir constantly to maintain a stable emulsion. If it does split, whisking in a tablespoon of cold butter can sometimes help bring it back together.
Is it possible to use dried herbs instead of fresh?
While fresh parsley is preferred for its bright flavor and color, dried parsley can be used if necessary. Use only 1 teaspoon of dried parsley, as dried herbs are more potent than fresh. Add them to the sauce during the simmering stage to allow them to rehydrate.

Creamy Garlic Butter Steak with Roasted Vegetables

Ingredients

  • 2 pieces steak, ribeye or sirloin
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Heat a heavy cast iron skillet over high heat until smoking hot. Add the steaks and sear until a deep brown crust forms, about 3 to 4 minutes per side for medium-rare. Ensure the internal temperature reaches 145°F (63°C). Remove the steaks from the pan and let them rest on a cutting board for at least 5 minutes before slicing.
  2. In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté until fragrant, about 30 seconds. Pour in the heavy cream and bring to a gentle simmer, scraping up any browned bits from the bottom of the pan. Continue to cook until the sauce thickens enough to coat the back of a spoon. Stir in the fresh parsley.
  3. Slice the rested steak against the grain into thin strips. Arrange the slices on a warm serving plate alongside roasted potatoes and asparagus. Spoon the rich garlic butter cream sauce generously over the steak, ensuring every piece is coated. Serve immediately while the sauce is warm and fragrant.
