Tips for success
For the creamiest texture, use full-fat dairy products. The evaporated milk and heavy cream provide richness and prevent the sauce from becoming thin.
If the sauce seems too thick after cooking, stir in a splash of warm milk to loosen it. If it’s too thin, let it cook a bit longer uncovered to thicken.
To make the panko topping extra flavorful, toss the toasted breadcrumbs with a little melted butter and a pinch of salt.
You can also add fresh herbs like parsley or thyme for a festive touch. For a spicy kick, add a pinch of cayenne or paprika to the breadcrumbs before toasting.
Variations
- Add Bacon: For a smoky twist, stir in 6 slices of cooked, crumbled bacon just before serving. The salty, crispy bits add a savory contrast to the creamy cheese sauce.
- Spicy Jalapeño: Add 1-2 finely diced jalapeños (seeds removed for less heat) along with the other ingredients. The peppers infuse the sauce with a gentle warmth and a pop of color.
- Lobster Mac: Fold in 1 pound of cooked, chopped lobster meat during the last 30 minutes of cooking. This elevates the dish to a luxurious special-occasion entrée.
- Broccoli Cheddar: Add 2 cups of frozen broccoli florets (thawed) during the last 30 minutes of cooking. The broccoli adds color and a mild, earthy flavor that pairs well with the cheeses.

This recipe can be assembled up to 24 hours in advance. Combine all ingredients in the slow cooker insert, cover, and refrigerate.
When ready to cook, place the insert in the slow cooker and cook on LOW for 2 hours, adding 15-20 minutes to the cooking time if starting from cold. The panko topping should be toasted just before serving.
Serving ideas
Serve this mac and cheese as a hearty side dish for holiday dinners, potlucks, or game-day spreads. It pairs beautifully with roasted turkey, ham, or grilled meats. For a complete meal, add a simple green salad or steamed vegetables on the side.
For a festive presentation, transfer the mac and cheese to a large serving bowl and sprinkle with the toasted panko and a few fresh herbs.
This dish is best served hot and fresh, so time the cooking to finish just before serving. Leftovers can be enjoyed the next day, but the texture will be thicker.

Five-Cheese Crockpot Mac and Cheese for Holiday Crowds

Ingredients
- 16 oz uncooked elbow pasta
- 2 cups shredded sharp cheddar cheese
- 1 1/2 cups shredded Gruyère cheese
- 1 1/2 cups shredded Monterey Jack cheese
- 8 oz cream cheese, cubed and softened
- 12 oz evaporated milk
- 1 cup heavy cream
- 1/2 cup unsalted butter, melted (1 stick)
- 1 cup panko breadcrumbs, toasted
Instructions
- Place the uncooked elbow pasta in the slow cooker. Add the shredded sharp cheddar, Gruyère, Monterey Jack, cubed cream cheese, evaporated milk, heavy cream, and melted butter. Stir everything together until the pasta is well coated and the cheeses are evenly distributed.
- Cover the slow cooker with the lid. Set the heat to LOW and cook for 2 hours. Do not stir during the first hour to allow the pasta to absorb the liquid evenly.
- Continue cooking on LOW for the remaining time, stirring once after the first hour. The pasta should become tender and the sauce should thicken into a velvety, bubbling cheese sauce. Cook until the pasta is al dente and the sauce is creamy.
- Test the pasta for doneness by tasting a piece. It should be tender but still hold its shape. The cheese sauce should be smooth and coat the back of a spoon. If the pasta is still firm, cover and cook for another 10-15 minutes.
- While the mac and cheese finishes cooking, toast the panko breadcrumbs in a dry skillet over medium heat. Stir frequently until golden brown and fragrant, about 3-4 minutes. Remove from heat and set aside.
- Once the mac and cheese is done, scoop it into a serving dish or directly onto plates. Sprinkle the toasted panko breadcrumbs generously over the top just before serving to add a crunchy contrast to the creamy pasta.
