Tips for success
For the creamiest texture, use full-fat cream cheese and freshly shredded cheddar. Pre-shredded cheese often contains anti-caking agents that can affect the melt.
If you have time, shred the cheddar from a block yourself. Also, make sure the cream cheese is softened before adding it to the slow cooker; this helps it blend in smoothly without lumps.
This dip is best served warm, so keep it on the warm setting of your slow cooker during your gathering. If it thickens too much as it sits, stir in a splash of milk or chicken broth to loosen it back up.
For an extra touch, top the dip with chopped green onions, diced tomatoes, or sliced jalapeños just before serving, though the video does not include these.
Variations
- Spicy Jalapeño: Add 1 to 2 diced jalapeños (seeded for less heat) along with the beans. Use pepper Jack cheese instead of cheddar for an extra kick.
- Smoky Bacon: Stir in 1/2 cup cooked, crumbled bacon after shredding the chicken. The smoky flavor pairs beautifully with the creamy beans and cheese.
- Black Bean Swap: Replace refried beans with a can of drained and rinsed black beans for a chunkier texture. The dip will be less creamy but still delicious.
- Ground Beef Version: Brown 1 lb ground beef with taco seasoning, then use it instead of the chicken. Cook the beef thoroughly before adding it to the slow cooker with the other ingredients.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze the dip in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave for 1 to 2 minutes, stirring halfway.
Store any leftover dip in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop, stirring occasionally, until hot and creamy. If the dip thickens after refrigeration, add a little milk or broth to restore the desired consistency.
This dip can be assembled up to 1 day ahead. Layer all the ingredients in the slow cooker insert, cover, and refrigerate overnight.
When ready to cook, place the insert in the slow cooker and cook on low for 3 to 4 hours, or until the chicken is cooked through and the cheese is melted. You may need to add a little extra cooking time since the ingredients start cold.
Serving ideas
Serve this dip warm with tortilla chips, corn chips, or crusty bread for dipping. It also pairs well with fresh vegetables like carrot sticks, celery, and bell pepper strips.
For a heartier option, spoon the dip over baked potatoes or use it as a filling for quesadillas. The creamy, cheesy texture and savory flavor make it a versatile addition to any snack spread.
For a complete party spread, offer a variety of dippers and let guests help themselves. The dip can be kept warm in the slow cooker on the low or warm setting for several hours, making it perfect for game day or holiday gatherings. Garnish with fresh cilantro or a sprinkle of extra cheese if desired, though the video does not include these.

Slow Cooker Texas Trash Chicken Dip

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 1 can (16 oz) refried beans
- 1 oz taco seasoning
- 8 oz cream cheese, softened
- 2 cups shredded cheddar cheese
Instructions
- Place the boneless skinless chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Spoon the refried beans over the top of the chicken, spreading them gently to cover. Sprinkle the taco seasoning evenly over the beans.
- Place the block of cream cheese on top of the bean mixture. Scatter the shredded cheddar cheese evenly over the cream cheese and beans.
- Cover the slow cooker and cook on low for 3 hours, or until the chicken is cooked through and registers 165°F (74°C) in the thickest part. The cheeses should be fully melted and the mixture bubbly at the edges.
- Remove the chicken breasts from the slow cooker and place them on a cutting board. Using two forks, shred the chicken into bite-size pieces. Return the shredded chicken to the slow cooker and stir everything together until well combined.
- Stir the dip thoroughly until the cream cheese and cheddar are fully incorporated and the mixture is smooth and creamy. Serve warm directly from the slow cooker or transfer to a serving bowl.
