Before you start

Before you start, make sure your slow cooker is clean and ready to go. If you are using a 6-quart model, that is ideal, but any size will work as long as the ingredients fit comfortably.

Take the cream cheese out of the refrigerator about 30 minutes before you begin so it softens. Measure out the refried beans, taco seasoning, and shredded cheddar so everything is ready to layer. Have a cutting board and two forks on hand for shredding the chicken after it cooks.

Ingredients at a glance (5)
  • 1 1/2 lb boneless skinless chicken breasts
  • 1 can (16 oz) refried beans
  • 1 oz taco seasoning
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese

Instructions

Layer and Start

  1. Layer the Ingredients
Place the boneless skinless chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Spoon the refried beans over the top of the chicken, spreading them gently to cover. Sprinkle the taco seasoning evenly over the beans.
Look for The chicken is fully covered with beans and seasoning.
Tip If the chicken breasts are very thick, you can pound them to an even thickness for more even cooking.
  2. Add Cream Cheese and Cheddar
Place the block of cream cheese on top of the bean mixture. Scatter the shredded cheddar cheese evenly over the cream cheese and beans.
Look for The cream cheese block sits on top, surrounded by shredded cheddar.
Tip Using softened cream cheese helps it melt more smoothly into the dip.

At the end of this phase, the slow cooker contains raw chicken breasts covered with refried beans, taco seasoning, a block of cream cheese, and a generous layer of shredded cheddar.

The ingredients are layered but not yet mixed, and the slow cooker is ready to be turned on. The cream cheese is still cold and firm, and the cheddar is in loose shreds. This is the starting point, and everything is set for slow, even cooking.

Cook and Melt

  1. Cook on Low
Cover the slow cooker and cook on low for 3 hours, or until the chicken is cooked through and registers 165°F (74°C) in the thickest part. The cheeses should be fully melted and the mixture bubbly at the edges.
Look for The dip is hot and bubbly, and the chicken is opaque and cooked through.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist the urge to lift the lid during cooking; the heat escapes and slows the cooking.

After 3 hours on low, the chicken is cooked through and registers 165°F (74°C) in the thickest part. The cream cheese has softened and started to melt into the beans, and the cheddar is fully melted, creating a bubbly, golden surface. The dip is hot and fragrant, with the aroma of taco seasoning and melted cheese filling the kitchen. The edges are gently bubbling, and the mixture looks creamy and cohesive.

Shred and Finish

  1. Shred the Chicken
Remove the chicken breasts from the slow cooker and place them on a cutting board. Using two forks, shred the chicken into bite-size pieces. Return the shredded chicken to the slow cooker and stir everything together until well combined.
Look for The chicken shreds easily and is fully mixed into the creamy dip.
Tip Shred the chicken while it is still warm for the easiest shredding.
  2. Stir and Serve
Stir the dip thoroughly until the cream cheese and cheddar are fully incorporated and the mixture is smooth and creamy. Serve warm directly from the slow cooker or transfer to a serving bowl.
Look for The dip is thick, creamy, and uniform in color with no streaks of cream cheese.
Tip Keep the dip on the warm setting while serving to maintain its creamy texture.

Once the chicken is shredded and stirred back into the dip, the mixture becomes thick, creamy, and uniform. The shredded chicken is evenly distributed throughout, and the dip has a smooth, spoonable texture. The color is a warm, creamy orange from the melted cheddar and beans. A spoonful holds its shape and is steaming gently, ready to be served with chips or vegetables.

Common mistakes

One common mistake is lifting the lid too often during cooking. Every time you open the slow cooker, heat escapes, which can extend the cooking time and prevent the dip from reaching the right temperature.

Another mistake is shredding the chicken too finely or too coarsely; aim for bite-size pieces that mix well into the dip. Finally, do not skimp on the cream cheese or cheddar, as they are essential for the creamy, cheesy texture that makes this dip so good.

How to tell it’s done

The dip is done when the chicken is cooked through and reaches an internal temperature of 165°F (74°C) in the thickest part. The cheeses should be fully melted and the mixture should be hot and bubbly around the edges.

After shredding and stirring, the dip should be thick, creamy, and uniform in color, with no visible streaks of cream cheese or chunks of unmelted cheddar. Serve it warm for the best texture and flavor.

  • Poultry: 165°F (74°C) in the thickest part
