Tips for success
For the best flavor, use a taco seasoning that you enjoy and that has a good balance of spices. If you like extra heat, choose a spicy salsa or add a pinch of cayenne pepper. You can also stir in some chopped cilantro or green onions right before serving for a fresh finish.
To make this recipe even easier, you can use pre-shredded cheese and canned beans that are already seasoned. If you have leftover chicken, it's great in quesadillas, salads, or as a topping for nachos.
The sauce thickens as it sits, so if you have leftovers, you may want to add a splash of chicken broth when reheating.
Variations
- Spicy Chipotle: Add 1-2 chipotle peppers in adobo sauce, minced, along with the salsa. This will give the dish a smoky, spicy kick. Reduce or omit the salsa if you prefer a less tomato-heavy sauce.
- Veggie-Packed: Stir in 1 cup of frozen corn kernels and 1 diced bell pepper with the beans. The vegetables will cook down and add sweetness and texture. You may need to add a little extra cooking time if using a lot of vegetables.
- Cilantro-Lime: After shredding the chicken, stir in the juice of 1 lime and 1/2 cup chopped fresh cilantro. This brightens the dish and adds a fresh, zesty flavor. Serve with lime wedges for extra citrus.
- Green Salsa Version: Swap the red salsa for salsa verde (green salsa). This will give the dish a tangy, tomatillo-based flavor that pairs well with the chicken and cheese. You can also add a can of diced green chiles for extra heat.

Serving ideas
Serve the fiesta chicken in warm flour tortillas with your favorite toppings like shredded lettuce, diced tomatoes, sliced avocado, or a squeeze of lime.
It also works beautifully over steamed rice, quinoa, or as a filling for tacos, burritos, or quesadillas. The creamy sauce makes it a satisfying meal on its own.
For a fun presentation, set up a taco bar with all the fixings and let everyone build their own.
The dish is hearty enough to serve as a main course, and it pairs well with a simple side salad or Mexican street corn. Leftovers can be used in a variety of ways, making this a versatile recipe to have on hand.
