Before you start

Before starting, drain and rinse the pinto beans, and measure out the taco seasoning, salsa, sour cream, and shredded cheese.

Place the chicken breasts in the slow cooker first, then layer the remaining ingredients on top. No need to stir—the layers will meld as they cook. Have your serving tortillas or rice ready to go when the chicken is done.

Ingredients at a glance (6)
  • 3 lb boneless skinless chicken breasts
  • 1 oz taco seasoning mix
  • 15 oz canned pinto beans, drained and rinsed
  • 1 cup chunky salsa
  • 1/2 cup sour cream
  • 2 cups shredded Monterey Jack cheese

Instructions

Layer the Ingredients

  1. Add the Chicken
Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. They can overlap slightly, but try to keep them even for even cooking.
Look for The chicken should cover the bottom of the Crockpot.
Tip If the breasts are very thick, you can pound them to an even thickness for more uniform cooking.
  2. Season and Top with Beans and Salsa
Sprinkle the taco seasoning evenly over the chicken. Add the drained and rinsed pinto beans and the chunky salsa, spreading them over the chicken.
Look for The chicken should be well coated with seasoning, and the beans and salsa should cover the top.
Tip Use a spoon to spread the salsa if needed, but no need to stir.
  3. Add Sour Cream and Cheese
Dollop the sour cream over the top, then sprinkle with the shredded Monterey Jack cheese. Do not stir.
Look for The top should be covered with cheese and sour cream dollops.
Tip The sour cream and cheese will melt into the sauce as it cooks.

At the end of this phase, you'll have a beautifully layered Crockpot with chicken on the bottom, seasoned and topped with beans, salsa, sour cream, and cheese.

The ingredients should look fresh and colorful, with the cheese and sour cream creating a creamy top layer. Everything is ready to cook.

Slow Cook and Shred

  1. Cook Low and Slow
Cover the slow cooker and cook on LOW for 4 hours or on HIGH for 2 to 3 hours, until the chicken is cooked through and tender.
Look for The chicken should be fork-tender and the sauce bubbling around the edges.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid opening the lid during cooking to keep the heat in.
  2. Shred the Chicken
Remove the chicken breasts to a cutting board and shred with two forks. Return the shredded chicken to the slow cooker and stir into the sauce.
Look for The chicken should shred easily and be coated in the creamy sauce.
Tip Shred while the chicken is still warm for the best texture.

After cooking, the chicken should be fork-tender and cooked through, with an internal temperature of 165°F (74°C). The sauce will be bubbling and aromatic, with a rich, spicy scent. Shred the chicken and return it to the pot, stirring to combine.

Finish and Serve

  1. Stir and Let Bubble
Stir everything together, then cover and cook on HIGH for 15 to 20 minutes more, until the sauce is thickened and bubbly.
Look for The mixture should be bubbling gently and the sauce should cling to the chicken.
Tip If the sauce seems thin, let it cook a little longer uncovered.
  2. Serve
Serve the fiesta chicken warm with flour tortillas or over rice, garnished as desired.
Look for The chicken should be juicy and the sauce creamy.
Tip Warm the tortillas before serving for a softer texture.

The final sauce should be creamy, slightly thickened, and bubbling gently. The chicken should be coated in the cheesy, tangy sauce, and the beans should be tender. The aroma is irresistible—warm, spicy, and cheesy. Serve immediately with warm tortillas or rice.

Common mistakes

One common mistake is overcooking the chicken, which can make it dry. Stick to the recommended cook times and check for doneness early.

Another mistake is lifting the lid too often, which releases heat and extends cooking time. Also, avoid using low-fat sour cream or cheese, as they may not melt as smoothly and can make the sauce grainy.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) and shreds easily with a fork.

The sauce should be bubbly and slightly thickened, and the cheese melted into the mixture. If the sauce is too thin, cook uncovered for an additional 10 to 15 minutes to reduce.

  • Poultry: 165°F (74°C) in the thickest part
