Tips for success
For the creamiest result, use full-fat cheeses and sauce. Low-fat versions may separate or become grainy.
If the sauce seems too thick after cooking, stir in a splash of warm milk or chicken broth to loosen it. Conversely, if the sauce is too thin, remove the lid and cook on high for 15-20 minutes to reduce.
To add a pop of color and freshness, garnish with chopped parsley or basil before serving. For a bit of heat, sprinkle with red pepper flakes.
If you prefer a crispy top, transfer the cooked pasta to a baking dish, top with extra cheese, and broil for 2-3 minutes until golden and bubbly.
Variations
- Spicy Sausage Version: Swap the beef meatballs for spicy Italian sausage links (casings removed) and brown them in a skillet before adding. Add a pinch of red pepper flakes with the cheese for extra heat.
- Vegetarian Option: Use plant-based meatballs and a dairy-free cream sauce and cheese. Ensure all ingredients are labeled vegan. Cook time may be slightly shorter, so check pasta doneness at 3 hours on low.
- Mushroom and Spinach: Add 8 oz sliced mushrooms and 2 cups fresh spinach with the pasta. The mushrooms release liquid, so reduce the sauce to 1 1/2 cups. The spinach wilts into the creamy sauce beautifully.
- Chicken and Broccoli: Replace meatballs with 1 1/2 lb boneless, skinless chicken thighs cut into chunks. Add 2 cups broccoli florets in the last 30 minutes of cooking. Ensure chicken reaches 165°F (74°C).
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of milk or broth to revive the creamy sauce.
- Freezer
- Freeze in a freezer-safe container for up to 3 months.
- Reheat
- Reheat individual portions in the microwave in 30-second bursts, stirring in between, until hot.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will continue to absorb sauce, so add a splash of milk or broth when reheating to restore creaminess. Reheat gently in the microwave or on the stovetop until hot.
This recipe is ideal for meal prep. Assemble the ingredients in the slow cooker insert and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time if starting from cold. Alternatively, cook the dish completely, then cool and refrigerate for up to 3 days before reheating.
Serving ideas
Serve the creamy meatball cavatappi straight from the slow cooker for a casual family dinner, or plate it on warm white dishes for a more elegant presentation.
A side salad with a simple vinaigrette adds brightness, and crusty bread is perfect for sopping up the extra sauce. This dish is hearty enough to stand alone.
For a complete Italian-American meal, pair with garlic bread and a crisp green salad. The rich, creamy pasta pairs well with a light red wine like Chianti or a sparkling water with lemon. Leftovers make a delicious lunch the next day—just reheat and enjoy.

Creamy Crockpot Meatball Cavatappi: Dump, Cook, Done

Ingredients
- 2 lb homestyle Italian beef meatballs
- 1 lb cavatappi pasta
- 2 cups roasted garlic Parmesan cream sauce
- 1 wheel garlic-and-fine-herbs Boursin cheese
- 1 1/2 cups shredded Italian fontina
Instructions
- Place the beef meatballs in an even layer in the bottom of a 7-quart slow cooker. Spread them out so they cover the bottom without overlapping too much, ensuring even cooking.
- Sprinkle the cavatappi pasta over the meatballs, then pour the roasted garlic Parmesan cream sauce evenly over the top. Use a spoon to gently press the pasta down so it is mostly submerged in the sauce.
- Place the wheel of garlic-and-fine-herbs Boursin cheese in the center of the slow cooker. Scatter the shredded fontina cheese over the top, covering the pasta and meatballs as much as possible.
- Cover the slow cooker and cook on low for 4 hours, or on high for 2 hours, until the pasta is tender and the sauce is bubbling around the edges. Do not stir during the first 3 hours to allow the pasta to cook properly.
- After the cooking time, stir the mixture gently to combine the melted Boursin and fontina into the sauce. Check that the meatballs are cooked through and the pasta is al dente. If the pasta is still firm, cover and cook for another 30 minutes.
- Spoon the creamy meatball cavatappi onto warm plates. The pasta should be coated in the silky cheese sauce, with meatballs nestled throughout. Serve immediately while hot and bubbling.
