Tips for success
For the best texture, serve the mac and cheese right after it’s done. The sauce will thicken slightly as it sits, so if you need to hold it, keep it on the 'warm' setting and stir in a splash of milk to loosen it. The brioche crumbs are best added just before serving to maintain their crunch.
To make the brioche crumbs, pulse fresh brioche in a food processor, then toss with melted butter and garlic powder. Toast in a skillet over medium heat until golden and crisp. Store any leftovers in an airtight container for up to a week. You can also use panko for a lighter texture.
Variations
- Crab and Shrimp: Replace the lobster with a mix of lump crabmeat and chopped cooked shrimp. Use seafood stock instead of lobster stock. The cooking time remains the same; just ensure the seafood is heated through to 145°F (63°C).
- Bacon and Chive: Add 6 slices of cooked, crumbled bacon along with the lobster. Use chicken stock instead of lobster stock and garnish with extra chives. The smoky bacon adds a savory contrast to the sweet lobster.
- Spicy Jalapeño: Add 2 finely diced jalapeños (seeded for less heat) and 1/2 teaspoon of cayenne pepper to the slow cooker with the other ingredients. Use pepper jack cheese instead of white cheddar for extra kick. Top with crushed tortilla chips instead of brioche crumbs.
- Truffle Mac: Drizzle 1 tablespoon of truffle oil over the finished mac and cheese before serving. Swap the brioche crumbs for panko mixed with grated Parmesan and a little truffle oil. This adds an earthy, luxurious flavor that pairs beautifully with the lobster.

Store leftover lobster mac and cheese in an airtight container in the refrigerator for up to 3 days.
The sauce will thicken when chilled; reheat gently on the stovetop or in the microwave, adding a splash of milk or stock to restore the creamy consistency. The brioche crumbs will soften, so consider refreshing them with a quick toast before serving.
You can assemble the entire dish (without the crumbs) up to 24 hours in advance and store it covered in the refrigerator.
When ready to cook, add 30 minutes to the cooking time since you’re starting from cold. Alternatively, cook the full dish, let it cool, and refrigerate; reheat in the slow cooker on low or in the oven.
Serving ideas
Serve this lobster mac and cheese as a main course with a simple green salad or steamed vegetables to balance the richness.
It also makes a fantastic side dish for a holiday feast or a special dinner party. For a more indulgent presentation, spoon it into individual ramekins and broil briefly to crisp the top.
Pair with a crisp white wine like Chardonnay or a light sparkling wine to complement the creamy sauce and sweet lobster.
For a non-alcoholic option, a sparkling water with lemon works well. The dish is satisfying enough to stand alone, but a slice of crusty bread is great for soaking up any extra sauce.

Crockpot Lobster Mac and Cheese: Ultra-Creamy, Effortless

Ingredients
- 1 lb cavatappi pasta
- 8 oz Gruyere cheese, shredded
- 8 oz sharp white cheddar, shredded
- 1/2 cup mascarpone cheese
- 12 oz evaporated milk
- 1 cup lobster stock
- 1 lb Maine lobster meat, cooked and chopped
- 1 cup toasted garlic brioche breadcrumbs
- 2 tbsp fresh chives, chopped
Instructions
- Cook the cavatappi in a large pot of salted boiling water until just al dente, about 1 minute less than the package directions. Drain well and set aside. Shred the Gruyere and white cheddar if not already shredded. Chop the lobster meat into bite-size chunks, checking for any shell fragments.
- Place the cooked cavatappi in the slow cooker insert. Add the shredded Gruyere, white cheddar, mascarpone, evaporated milk, and lobster stock. Stir gently with a wooden spoon until well combined.
- Fold the chopped Maine lobster meat into the pasta mixture, distributing it evenly. Cover the slow cooker with the lid.
- Set the slow cooker to LOW and cook for 2 hours, stirring once halfway through, until the cheese is melted and the sauce is creamy and bubbling around the edges.
- After 2 hours, check that the internal temperature of the lobster reaches 145°F (63°C) to ensure it is heated through. If not, continue cooking in 15-minute increments until it does.
- Sprinkle the toasted garlic brioche breadcrumbs evenly over the top of the mac and cheese. Cover and cook for another 10 minutes to warm the crumbs.
- Garnish the mac and cheese with chopped fresh chives just before serving. Scoop generous portions onto plates, making sure each serving includes some lobster meat.
- Serve the lobster mac and cheese hot, with the cheese pull visible and the lobster pieces prominent. Enjoy the rich, creamy texture and the sweet lobster flavor.
