Before you start

Before you start, slice the kielbasa into 1/2-inch medallions. If the cream cheese is cold, let it sit at room temperature for about 30 minutes to soften.

Measure out the broccoli florets and shred the mozzarella if not pre-shredded. Have the jar of Alfredo sauce ready. No need to pre-cook the pasta or brown the sausage—everything goes into the slow cooker raw and cooks together.

Ingredients at a glance (6)
  • 2 lb smoked kielbasa, sliced into 1/2-inch medallions
  • 1 lb penne pasta
  • 4 cups fresh broccoli florets
  • 1 jar (15 oz) creamy garlic parmesan Alfredo sauce
  • 8 oz block cream cheese, softened
  • 2 cups shredded whole-milk mozzarella

Instructions

Layer and Set

  1. Layer the Ingredients
Place the sliced kielbasa in the bottom of a 6-quart slow cooker. Add the penne, broccoli florets, and the jar of Alfredo sauce. Stir gently to coat the pasta and vegetables with the sauce.
Look for The pasta and broccoli are coated with sauce, and the kielbasa is evenly distributed.
Tip Use a spatula to scrape all the sauce from the jar.
  2. Add the Cheeses
Place the block of cream cheese in the center of the slow cooker. Sprinkle the shredded mozzarella over the top.
Look for The cream cheese sits in the middle, surrounded by mozzarella.
Tip Soften the cream cheese beforehand for easier melting.

At the end of this phase, the slow cooker contains distinct layers: kielbasa on the bottom, pasta and broccoli mixed with sauce, and the cream cheese and mozzarella on top. The ingredients are not yet cooked, but the sauce coats the pasta and vegetables. The cream cheese is a solid block in the center, and the mozzarella is piled on top. Everything is ready to cook.

Slow Cook and Melt

  1. Slow Cook
Cover the slow cooker and cook on low for 3 hours, or until the pasta is tender and the sauce is bubbly. Stir once halfway through, if possible, to distribute the melted cheeses. Let it rest for 3 minutes before slicing.
Look for The sauce is bubbling around the edges, and the cheese is melted and creamy.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Resist lifting the lid too often, as heat escapes.

After 3 hours on low, the sauce is bubbling around the edges, and the cheese has melted into a creamy, golden layer. The pasta is tender, and the broccoli is bright green. The aroma of garlic and smoked sausage fills the kitchen. The kielbasa has released its savory juices, melding with the Alfredo sauce. Stir gently to combine—the sauce should be smooth and velvety.

Stir and Serve

  1. Finish and Serve
Stir the pasta well to combine all the ingredients. Let it rest for 5 minutes to thicken slightly. Serve hot, straight from the slow cooker or onto plates.
Look for The sauce clings to the pasta, and the cheese stretches when lifted.
Tip Garnish with extra black pepper or fresh herbs, if desired.

Once stirred, the dish is a cohesive, creamy pasta bake. The sauce clings to the penne, and the cheese stretches when lifted with a spoon. The kielbasa coins are caramelized at the edges, and the broccoli is tender.

The slow cooker is bubbling gently. Serve immediately, garnishing with additional black pepper or fresh parsley if desired. The dish is rich, savory, and satisfying.

Common mistakes

One common mistake is lifting the lid too often to check on the pasta, which releases heat and extends the cooking time. Another is using pre-shredded mozzarella that contains anti-caking agents, which can prevent it from melting smoothly.

Also, avoid over-stirring in the beginning, as the pasta may break. If the sauce looks curdled, it may be due to high heat or adding cold cream cheese; cook on low and ensure the cream cheese is softened.

How to tell it’s done

The dish is done when the pasta is tender but still holds its shape, and the sauce is bubbly and thickened. The internal temperature of the kielbasa should reach 145°F (63°C) since it is already cooked, but this is just to ensure it is heated through.

The cheese should be fully melted and the sauce smooth. If the sauce seems thin, let it rest for 5 minutes before serving—it will thicken as it cools slightly.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
