Tips for success
For the creamiest sauce, use full-fat cream cheese and freshly grated Parmesan. The condensed soup adds body, so don't be tempted to add extra liquid.
If you prefer a thinner sauce, you can stir in a splash of chicken broth or milk after shredding. For a richer flavor, you can add a tablespoon of butter or a pinch of nutmeg, but the classic version is already delicious.
This recipe is incredibly forgiving. You can double it for a crowd, or halve it for a smaller slow cooker. If you're short on time, you can cook on HIGH for 2-3 hours, but low and slow yields the most tender chicken.
Leftovers are great for lunches—store them in the fridge and reheat gently, adding a splash of milk if the sauce thickens too much.
Variations
- Add Bacon: Stir in 4 slices of cooked, crumbled bacon just before serving for a smoky, savory twist that complements the creamy sauce and sweet corn.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a diced jalapeño along with the soup for a subtle heat that balances the richness.
- Herb Infusion: Mix in 1 teaspoon of dried thyme or rosemary with the soup. These herbs pair beautifully with chicken and corn, adding an earthy note.
- Vegetable Boost: Add 1 cup of diced bell peppers or a handful of fresh spinach during the last 30 minutes of cooking for extra color and nutrition.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in an airtight container for up to 3 months.
- Reheat
- Reheat portions in the microwave in 30-second bursts, stirring between, or in a saucepan over medium-low heat, adding a splash of broth or milk if needed.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; when reheating, add a tablespoon or two of chicken broth, milk, or water to loosen it to the desired consistency.
Reheat gently on the stovetop or in the microwave, stirring occasionally, until warmed through.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker base and cook as directed.
You may need to add 30 minutes to the cooking time if starting from cold. Alternatively, you can cook the full dish and refrigerate it, then reheat in a pot or slow cooker when ready to serve.
Serving ideas
Serve this creamy chicken over warm buttered egg noodles for a classic pairing. The noodles provide a tender base that soaks up the rich sauce. For a lower-carb option, serve over cauliflower rice or steamed vegetables. A simple green salad with a light vinaigrette adds a fresh contrast to the creamy dish.
This dish also works well over rice, mashed potatoes, or even toasted crusty bread. For a complete meal, add a side of roasted green beans or a simple cucumber salad. Garnish with extra Parmesan and a sprinkle of black pepper or fresh parsley if you like, though the dish is plenty flavorful on its own.

Creamy Parmesan Sweet Corn Chicken: Easy Crockpot Dinner

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 2 cups frozen sweet corn kernels
- 1 can (10.5 oz) condensed cream of potato soup
- 8 oz cream cheese, softened
- 1/2 cup freshly grated Parmigiano-Reggiano
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the frozen sweet corn kernels over the chicken. Pour the condensed cream of potato soup over the top, spreading it slightly to cover some of the chicken and corn.
- Place the softened cream cheese in the center of the slow cooker, on top of the soup. Sprinkle the grated Parmigiano-Reggiano over the cream cheese and around the surface.
- Cover the slow cooker and cook on LOW for 4 to 5 hours, or until the chicken is fork-tender and easily shreds. The internal temperature of the chicken should reach 165°F (74°C) in the thickest part.
- Turn off the slow cooker. Using two forks, shred the chicken directly in the slow cooker, mixing it into the sauce and corn. Stir gently to combine everything into a creamy, cohesive dish.
- Spoon the creamy chicken and corn mixture over warm buttered egg noodles on individual plates. Serve immediately, with extra Parmesan on the side if desired.
