Before you start

Before you start, make sure your slow cooker is clean and ready to go. If you're serving the dish over egg noodles, bring a pot of salted water to a boil just before the chicken is done.

Soften the cream cheese by leaving it at room temperature for about 30 minutes, or microwave it in a bowl for 15-20 seconds. Have all your ingredients measured and within reach, and a cutting board and two forks ready for shredding the chicken.

Ingredients at a glance (5)
  • 1 1/2 lb boneless skinless chicken breasts
  • 2 cups frozen sweet corn kernels
  • 1 can (10.5 oz) condensed cream of potato soup
  • 8 oz cream cheese, softened
  • 1/2 cup freshly grated Parmigiano-Reggiano

Instructions

Layer and Set

  1. Layer the Ingredients
Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the frozen sweet corn kernels over the chicken. Pour the condensed cream of potato soup over the top, spreading it slightly to cover some of the chicken and corn.
Look for The chicken is covered with corn and soup; the slow cooker is about half full.
Tip No need to stir after adding the soup—it will melt and combine as it cooks.
  2. Add the Cheeses
Place the softened cream cheese in the center of the slow cooker, on top of the soup. Sprinkle the grated Parmigiano-Reggiano over the cream cheese and around the surface.
Look for The cream cheese sits as a block, with Parmesan scattered around it.
Tip Soften the cream cheese beforehand for quicker melting and a smoother sauce.

At the end of this phase, you have a neat layer of chicken at the bottom, topped with corn, soup, and a block of cream cheese with Parmesan scattered on top. The slow cooker looks tidy and the ingredients are in place, ready to cook. The cream cheese is still solid, which is fine—it will melt as the slow cooker heats up.

Slow Cook and Shred

  1. Slow Cook Until Tender
Cover the slow cooker and cook on LOW for 4 to 5 hours, or until the chicken is fork-tender and easily shreds. The internal temperature of the chicken should reach 165°F (74°C) in the thickest part.
Look for The sauce is bubbling gently around the edges, and the chicken is tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the temperature with an instant-read thermometer to be sure.
  2. Shred the Chicken
Turn off the slow cooker. Using two forks, shred the chicken directly in the slow cooker, mixing it into the sauce and corn. Stir gently to combine everything into a creamy, cohesive dish.
Look for The chicken shreds easily and the sauce is thick and creamy.
Tip If the sauce seems thin, let it sit uncovered for a few minutes to thicken.

After 4 to 5 hours on low, the kitchen smells savory and rich. The sauce is bubbling gently, the chicken is fork-tender, and the cream cheese has melted into a creamy sauce.

The corn is plump and golden. Shred the chicken right in the pot, and you'll see the sauce cling to every strand. The texture is thick, creamy, and utterly inviting.

Serve

  1. Serve Over Noodles
Spoon the creamy chicken and corn mixture over warm buttered egg noodles on individual plates. Serve immediately, with extra Parmesan on the side if desired.
Look for The creamy sauce coats the noodles nicely.
Tip Buttered noodles are classic, but rice or mashed potatoes also work well.

With the chicken shredded and stirred into the sauce, the dish is ready to serve. Spoon it over warm buttered noodles, and watch the creamy sauce coat each strand. The chicken is moist, the corn adds a sweet pop, and the Parmesan flavor shines through. It's a comforting, complete meal that's ready to be enjoyed.

Common mistakes

One common mistake is overcooking the chicken, which can make it dry and stringy. Stick to the recommended cook time and check the temperature early if your slow cooker runs hot. Another pitfall is adding the cream cheese cold—this can lead to lumps in the sauce.

Always soften it first. Also, resist the urge to stir during cooking; the ingredients will meld together naturally. Finally, don't skip the freshly grated Parmesan—it truly elevates the dish.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part, and it shreds easily with a fork. The sauce should be bubbly and slightly thickened, with the cream cheese and Parmesan fully melted and incorporated.

If the sauce looks too thin, let the slow cooker sit uncovered for 10-15 minutes before serving. The corn should be tender and the flavors well blended.

  • Poultry: 165°F (74°C) in the thickest part
