Tips for success
For the most flavorful sauce, use a good-quality ranch seasoning packet and full-fat cream cheese. If you have time, sear the chicken breasts in a skillet for 2 minutes per side before adding them to the slow cooker; this adds depth but is optional.
To prevent the avocado from browning, mash it with a squeeze of lemon or lime juice before stirring in. When adding the pasta, make sure it is submerged in the sauce as much as possible so it cooks evenly.
If the sauce becomes too thick after sitting, loosen it with a splash of warm chicken broth or milk. For a spicier kick, add a few dashes of hot sauce or a pinch of cayenne with the ranch seasoning.
The dish is best enjoyed the day it is made, but leftovers can be refrigerated and reheated gently. When reheating, add a little broth to restore the creamy consistency, and avoid microwaving on high to prevent the sauce from separating.
Variations
- Spicy Ranch: Add 1/2 teaspoon crushed red pepper flakes or a chopped jalapeño with the ranch seasoning. For extra heat, use pepper Jack cheese instead of white cheddar.
- Vegetable Boost: Stir in 2 cups of baby spinach or chopped kale during the last 10 minutes of cooking, letting it wilt into the sauce. Add a cup of frozen peas along with the pasta for extra color and sweetness.
- Smoky Twist: Use smoked paprika or chipotle powder in place of part of the ranch seasoning. Substitute the bacon with smoked sausage slices for a different smoky flavor.
- Lighter Version: Use reduced-fat cream cheese and low-sodium chicken broth. Omit the bacon or use turkey bacon, and increase the amount of avocado for creaminess.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Stir before reheating; add a splash of broth or milk to restore creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little broth or milk if the sauce has thickened too much.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; stir in a splash of broth or milk when reheating. Keep the avocado garnish separate if possible to avoid browning.
The chicken and sauce can be prepared up to 2 days ahead. Cook the chicken and shred it, then combine with the sauce and refrigerate. When ready to serve, reheat the mixture in the slow cooker or a pot, then add the pasta and cheese and cook until heated through. The bacon can also be cooked ahead and stored in the refrigerator.
Serving ideas
Serve this pasta hot, straight from the slow cooker, in deep bowls so the creamy sauce stays contained. Top each bowl with extra cubed avocado and a generous sprinkle of chopped cilantro.
The cool, buttery avocado contrasts beautifully with the warm, smoky pasta. A side of crusty bread or a simple green salad would round out the meal nicely, though the pasta is hearty enough to stand alone.
For a complete dinner, pair with roasted vegetables or a crisp cucumber salad. The dish is rich, so smaller portions are satisfying. Leftovers can be packed for lunch and reheated, though the avocado garnish is best added fresh.
If you are serving a crowd, this recipe can be doubled in a larger slow cooker, but increase the cooking time slightly and check the chicken for doneness.

Crockpot Avocado Ranch Chicken Bacon Pasta

Ingredients
- 1 1/2 lb boneless, skinless chicken breasts
- 1 packet ranch seasoning mix
- 14 oz petite diced tomatoes, drained
- 2 cups chicken broth
- 8 oz cream cheese, softened and cubed
- 4 cloves garlic, minced
- 16 oz rotini pasta
- 1 cup shredded white cheddar cheese
- 1/2 cup crispy bacon, crumbled
- 1 ripe avocado, peeled and pitted
- Cubed fresh avocado, for serving
- Fresh cilantro, chopped, for serving
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker. Sprinkle the ranch seasoning over the chicken. Add the drained petite diced tomatoes, chicken broth, cream cheese cubes, and minced garlic. Do not stir; just spread the ingredients evenly over the chicken. Cover with the lid.
- Cook on LOW for 3 hours, or until the chicken is tender and easily shreds. The cream cheese will melt into the liquid, creating a rich sauce. Do not lift the lid during cooking to keep the heat steady.
- Using two forks, shred the chicken directly in the slow cooker into bite-size pieces. Stir the sauce to combine everything. The sauce should be smooth and creamy.
- Stir in the rotini pasta, shredded white cheddar, crumbled bacon, and the blended ripe avocado. Mix until the cheese melts and the avocado is fully incorporated, giving the sauce a green tint and velvety texture.
- Cover and cook on LOW for 15 to 20 minutes, until the pasta is tender and everything is heated through. Stir gently once halfway. Serve hot, topped with cubed fresh avocado and chopped cilantro.
