Tips for success
For the cleanest slices, use a sharp knife and wipe it with a damp cloth between cuts. If the cake is too soft, refrigerate it for 30 minutes before slicing.
Serve with a dusting of confectioners' sugar or a dollop of whipped cream, though it's delicious on its own. The cake is best enjoyed the day it's made, but leftovers are still wonderful the next day.
To intensify the coconut flavor, toast shredded coconut and sprinkle it over the top before serving. You can also add a teaspoon of coconut extract along with the vanilla.
If you prefer a more pronounced custard layer, use a slightly larger egg or reduce the flour by a tablespoon. The recipe is forgiving, so feel free to adjust based on your preferences.
Variations
- Lemon Coconut Custard Cake: Add 1 tablespoon of lemon zest and 2 tablespoons of lemon juice to the batter along with the vanilla. The citrus brightens the coconut flavor and adds a refreshing note. Omit the salt if using salted butter.
- Chocolate Coconut Custard Cake: Replace 2 tablespoons of the flour with unsweetened cocoa powder and add 1/2 cup of mini chocolate chips to the batter. The chocolate melts into the custard, creating pockets of richness.
- Spiced Coconut Custard Cake: Add 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground nutmeg, and a pinch of ground cardamom to the dry ingredients. These warm spices complement the coconut and make the cake cozy for fall.
- Pineapple Coconut Custard Cake: Fold 1 cup of well-drained crushed pineapple into the batter before baking. The pineapple adds sweetness and a slight tang, and its moisture keeps the cake extra tender.
Storage and make-ahead
- Fridge
- Store leftover cake in an airtight container in the refrigerator for up to 4 days. Let it come to room temperature or reheat gently before serving.
- Freezer
- Freeze the baked and cooled cake, wrapped tightly in plastic wrap and foil, for up to 2 months. Thaw overnight in the refrigerator before serving.
- Reheat
- Reheat individual slices in the microwave for 15–20 seconds, or in a 300°F (150°C) oven for 5–7 minutes until warm.
Store leftover cake in an airtight container in the refrigerator for up to 4 days. The custard will firm up when chilled, so let it sit at room temperature for 15 minutes before serving if you prefer a softer texture. The cake can also be kept at room temperature for up to 2 days, but refrigeration is recommended for longer storage.
The cake can be baked a day ahead and stored in the refrigerator. Bring it to room temperature before serving, or reheat individual slices in the microwave for 15 seconds. The custard will set more firmly overnight, making it easier to slice. This makes it a great option for entertaining.
Serving ideas
Serve this cake warm or at room temperature, either on its own or with a light dusting of confectioners' sugar. A spoonful of lightly sweetened whipped cream or a scoop of vanilla ice cream complements the creamy texture beautifully.
For a tropical touch, add fresh mango slices or toasted coconut flakes. The cake is equally delightful with a cup of coffee or tea.
For a more elegant presentation, cut the cake into small squares and serve on a platter with fresh berries. The custard's richness pairs well with tart fruits like raspberries or passionfruit.
If serving as a dessert after dinner, consider a drizzle of caramel or chocolate sauce, though the cake's subtle coconut flavor is lovely on its own.

Creamy Coconut Milk Custard Cake

Ingredients
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 1 can (13.5 oz) full-fat coconut milk
- 1/2 cup all-purpose flour
- 1/4 tsp salt
Instructions
- Heat the oven to 350°F (175°C). Butter an 8x8-inch glass baking dish. In a large bowl, whisk the melted butter and granulated sugar until well combined. Add the eggs one at a time, whisking after each addition, then stir in the vanilla extract. Pour in the coconut milk and whisk until smooth.
- Add the all-purpose flour and salt to the wet mixture. Whisk just until no dry streaks remain. The batter will be thin and pourable.
- Pour the batter into the prepared baking dish. Bake for 40 to 45 minutes, until the top is golden brown and the edges are set but the center is still slightly tender. A knife inserted near the center should come out with moist crumbs, not wet batter.
- Remove the dish from the oven and let the cake cool in the pan on a cooling rack for at least 15 minutes. The custard will set as it cools. Use a metal spatula to lift out squares, and serve warm or at room temperature.
