Tips for success

To elevate the presentation, serve the dip in a pre-warmed bowl or directly in the slow cooker with a decorative ladle. Placing the tortilla chips in a separate basket ensures they stay crisp for longer, preventing them from becoming soggy if the dip is served slowly over the course of a party or gathering.

If you find the dip has become slightly too thick after sitting on the warm setting for a long time, stir in an extra tablespoon of lime juice or a small amount of warm broth.

This helps to re-emulsify the cheese and keeps the texture velvety and easy to scoop, ensuring every bite remains as delicious as the first one.

Variations

  • Spicy Version: Add two additional minced chipotles in adobo and a teaspoon of cayenne pepper to the mixture before cooking. This will provide a significant heat boost that pairs well with the sweetness of the honey.
  • Tex-Mex Style: Incorporate a half-cup of drained black beans and a half-cup of frozen corn into the mixture. These additions provide extra texture and a classic flavor profile that complements the smoky chicken.

Storage and make-ahead

Fridge
Keep in an airtight container for up to 3 days.
Freezer
Freezing is not recommended as the cheese sauce may separate and lose its velvety texture upon thawing.
Reheat
Reheat in a microwave-safe dish in 30-second increments, stirring in between, or on the stovetop over low heat until warmed through.

Store any leftovers in an airtight container in the refrigerator for up to three days. Ensure the dip has cooled to room temperature, but do not leave it out for more than two hours. When ready to eat again, transfer the dip to a microwave-safe dish or a small saucepan and heat gently until warmed through.

You can prepare the base by combining all ingredients in the slow cooker insert and storing it in the refrigerator overnight.

When ready to cook, simply place the insert into the slow cooker and add 30 to 45 minutes to the total cooking time to account for the cold ingredients, ensuring the chicken reaches the safe temperature.

Serving ideas

This dip is best served hot with a variety of dippers. While traditional corn tortilla chips are the standard choice, consider offering toasted baguette slices, fresh vegetable sticks like celery or bell peppers, or even pita chips.

The smoky and sweet flavor profile works well with a wide range of crunchy accompaniments that can stand up to the thick, creamy consistency.

For a larger event, consider portioning the dip into individual small ramekins to keep it warm longer. This also helps with hygiene and makes it easier for guests to serve themselves.

Adding an extra sprinkle of fresh cilantro and a squeeze of lime just before serving helps maintain the bright, appetizing look of the dish throughout the event.

Frequently asked questions

Can this dip be made in a microwave?
While the slow cooker is preferred for the best texture, you can make this in a microwave-safe bowl. Heat on medium power in 2-minute increments, stirring thoroughly between each interval, until the cheese is melted and the chicken is heated through. Ensure the internal temperature reaches 165°F (74°C).
Why does the sauce split after cooking?
Splitting usually occurs if the heat is too high or if the dip is cooked for too long. Always use the LOW setting on your slow cooker. If it does split, stir vigorously to re-emulsify the fats, or add a small amount of warm cream or milk to bring the sauce back together.
Can rotisserie chicken be used?
Yes, rotisserie chicken is an excellent choice for this recipe. It is already cooked and seasoned, which saves time. Simply shred the meat finely to ensure it integrates well with the cheeses and other ingredients during the slow-cooking process.

Ingredients

  • 3 1/2 cups shredded chicken
  • 16 oz cream cheese
  • 2 cups Oaxaca cheese
  • 3 minced chipotles in adobo
  • 1/3 cup honey
  • 2 fresh limes, juiced
  • cotija cheese for serving
  • fresh cilantro for serving

Instructions

  1. Keep the chicken chilled in the refrigerator until ready to assemble, leaving it out for at most 30 minutes before cooking. Place the shredded chicken, cream cheese, Oaxaca cheese, minced chipotles in adobo, honey, and the freshly squeezed lime juice directly into the ceramic insert of the slow cooker.
  2. Cover the slow cooker and set it to cook on LOW for 2 hours. Ensure the chicken reaches a safe internal temperature of 165°F (74°C) as it simmers and the cheeses melt into a velvety consistency.
