Before you start

Before beginning, ensure that your shredded chicken is fully prepared and kept cold in the refrigerator until needed, leaving it at room temperature for no more than 30 minutes before cooking.

Gather all your measured ingredients, including the lime juice and minced chipotles, so you can assemble the dip quickly and safely without interruption.

Ingredients at a glance (8)
  • 3 1/2 cups shredded chicken
  • 16 oz cream cheese
  • 2 cups Oaxaca cheese
  • 3 minced chipotles in adobo
  • 1/3 cup honey
  • 2 fresh limes, juiced
  • cotija cheese for serving
  • fresh cilantro for serving

Instructions

Assembly Phase

  1. Combine Ingredients
Keep the chicken chilled in the refrigerator until ready to assemble, leaving it out for at most 30 minutes before cooking. Place the shredded chicken, cream cheese, Oaxaca cheese, minced chipotles in adobo, honey, and the freshly squeezed lime juice directly into the ceramic insert of the slow cooker.
Look for ensure all ingredients are evenly distributed in the insert
Tip ensure the cream cheese is cut into cubes to help it melt faster

At this stage, the slow cooker contains all the primary ingredients layered together. The mixture should look organized and ready for the slow melting process.

Ensure that the Oaxaca cheese is spread evenly and the honey and lime juice are drizzled across the top to help integrate the flavors as the heat builds inside the ceramic vessel.

Cooking Phase

  1. Slow Cook
Cover the slow cooker and set it to cook on LOW for 2 hours. Ensure the chicken reaches a safe internal temperature of 165°F (74°C) as it simmers and the cheeses melt into a velvety consistency.
Look for the mixture should be bubbling and smooth
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip stir the mixture halfway through to ensure even melting

During the cooking phase, the slow cooker will begin to emit a rich, smoky aroma as the chipotles and lime juice meld with the chicken.

By the end of the two hours, the cheeses should be completely liquefied and bubbling. The mixture will have transformed into a cohesive, velvety dip that is ready to be finished with toppings.

Finishing Phase

  1. Finish and Serve
Once the dip is fully melted and bubbling, remove the lid. Sprinkle the top generously with crumbled cotija cheese and fresh cilantro. Serve immediately while warm with plenty of crisp tortilla chips for dipping.
Look for cheese topping should be distributed evenly across the surface
Tip keep the slow cooker on the warm setting if serving over an extended period

In the final phase, the dip is topped with the crumbled cotija cheese and fresh cilantro. The white cotija contrasts beautifully with the warm, golden-red dip, while the cilantro adds a pop of green freshness. The dip should smell savory, smoky, and bright, with a texture that is thick enough to hold onto a tortilla chip.

Common mistakes

A common mistake is using too much heat, which can cause the cheese to separate or the chicken to dry out; always stick to the LOW setting.

Avoid adding the fresh cilantro too early, as it will wilt and lose its vibrant color and fresh flavor; always sprinkle it on right before serving. Finally, ensure the chipotles are finely minced so that you do not end up with large, intensely spicy chunks in a single bite.

How to tell it’s done

The dip is ready when the cheese is completely melted and the entire mixture is bubbling throughout. The consistency should be thick, creamy, and uniform. Use a digital thermometer to confirm the chicken has reached an internal temperature of 165°F (74°C) to ensure food safety before serving the dip to guests.

  • Poultry: 165°F (74°C) in the thickest part
