Tips for success
To achieve the ultimate glossy alfredo sauce, reserve about half a cup of the pasta cooking water before draining the spaghetti. If the sauce becomes too thick after tossing the pasta and chicken together, splash in a tablespoon or two of this starchy water.
The starch acts as a natural emulsifier, thinning the sauce to a perfect coating consistency without diluting the rich flavors of the cream.
Always serve this dish in warmed bowls to prevent the cream-based sauce from cooling down too quickly and stiffening. You can easily warm your serving dishes by running them under hot water for a minute and drying them thoroughly before plating. Serving immediately while steam is still rising from the dish ensures the rich sauce is enjoyed at its peak velvety texture.
Variations
- Cajun Chicken Alfredo: Season the chicken with Cajun spices instead of plain salt and pepper to add a smoky, spicy kick to the creamy sauce.
- Mushroom Alfredo: Sauté sliced cremini mushrooms in the skillet along with the garlic before adding the heavy cream for an earthy flavor.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freezing is not recommended, as the cream-based alfredo sauce will separate and become grainy upon thawing.
- Reheat
- Reheat gently on the stovetop over low heat, adding a splash of milk or cream to loosen the sauce while stirring constantly.
Allow any leftover chicken spinach alfredo to cool completely at room temperature for no more than two hours before storing. Place the leftovers in an airtight container and store them in the refrigerator.
Because cream-based sauces can absorb odors easily, ensure the lid is tightly sealed. Consume the refrigerated leftovers within three to four days for the best quality and food safety.
While this pasta is best enjoyed fresh, you can prepare parts of it ahead of time to save minutes on busy nights. Cook the chicken and store it in the refrigerator up to a day in advance.
You can also mince the garlic ahead of time. However, do not cook the spaghetti or assemble the alfredo sauce beforehand, as the cream sauce does not hold its velvety texture well when stored assembled.
Serving ideas
Present this creamy chicken spinach alfredo spaghetti in shallow, warm bowls, twirling the pasta high with a carving fork to create an elegant mountain of spaghetti.
Ensure several pieces of the golden-brown seared chicken and vibrant green spinach are visible on top of each portion. Serve immediately while steam is still rising from the dish, as the rich sauce is best enjoyed at its peak velvety texture.
Pair this rich and comforting pasta with a simple, crisp green salad tossed in a light vinaigrette to balance the heaviness of the cream sauce. Warm, crusty garlic bread or freshly baked focaccia makes an excellent accompaniment, perfect for scooping up any extra alfredo sauce left at the bottom of the bowl. Offer additional seasonings at the table for guests to customize their plates.

Creamy Chicken Spinach Alfredo Spaghetti

Ingredients
- 12 oz spaghetti
- 1 lb chicken breast, cut into bite-sized pieces
- 3 garlic cloves, minced
- 1 1/2 cups heavy cream
- 2 cups baby spinach
Instructions
- Bring a large pot of water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain the pasta, reserving half a cup of the pasta cooking water, and set aside.
- Heat a large skillet over medium-high heat. Add the chicken pieces to the hot skillet and sear until golden brown and cooked through, about 6 to 8 minutes. Ensure the chicken reaches an internal temperature of 165°F (74°C). Remove the chicken from the skillet and set aside.
- In the same skillet, reduce the heat to medium. Add the minced garlic and cook for about 1 minute, stirring constantly, until fragrant and soft, being careful not to let it burn.
- Pour the heavy cream into the skillet and bring to a gentle simmer. Reduce the heat to low and whisk constantly until the sauce is smooth and begins to thicken slightly.
- Add the fresh baby spinach to the simmering cream sauce. Stir gently and let it simmer for 1 to 2 minutes until the spinach is fully wilted and incorporated into the velvety sauce.
- Add the cooked spaghetti and seared chicken pieces back into the skillet with the alfredo sauce. Toss everything together over low heat until the pasta is thoroughly coated and steaming hot. If the sauce is too thick, add a splash of the reserved pasta water.
